Tuna Melts

Tuna Melts, quick and easy

Lately, we’ve been trying to put some meat on Big Sis’ bones. Well, it’s something we’ve been working on for a while, but even more than ever since she just had her yearly check up. Bottom line:  put more meat on her bones. Let’s start with tuna melts! lol.

I made this tuna melt a few weeks back when the girls were tracked out. We’d been eating at home a lot so one day come lunch time, I found myself standing in front of our pantry for a really long time trying to figure out what to make when I spied some canned tuna. Hmmm… tuna. Tuna… Tuna melts!! I’ve always loved tuna melts but it had been a reaaaalllly long time since I had one, but not sure if the girls would go for it. They have a lot of protein – perfect for Big Sis, so I thought I’d give them a try.

It was pretty easy. Use Sharon’s Tuna Egg Salad recipe or just throw the following together:

  1. Mix tuna + mayo + relish + 1 hard-boiled egg + salt + black pepper
  2. Lightly toast 1 slice of bread for each serving spread tuna salad evenly on top of the toast top with 1 slice of cheese (in this case Muenster)
  3. Bake in oven at 350 for about 10 minutes or until cheese is melted
  4. Remove from oven and transfer to plate
  5. Top with shredded lettuce and a slice of tomato.
  6. Eat with a fork and knife or have fun eating it with your hands like a pizza.

I was so excited that the girls devoured their tuna melts. Yay! Just love these little successes and new discoveries!
