Sharon’s Tuna Egg Salad Two Ways

I love tuna salad sandwiches. I love egg salad sandwiches. Naturally, I love tuna egg salad sandwiches! But it took my post-collage roommate, Sharon, to put the two together for me. I don’t remember exactly how she made it back then but it was something like this. It’s how I make it now and forever Sharon’s Tuna Egg Salad in my heart.

Sharon’s Tuna Egg Salad

Recipe inspired by my old roomie Sharon

Ingredients

  • 1 5 oz can tuna packed in water
  • 1 boiled egg
  • 1 ½ Tbsp mayo
  • 1 Tbsp pickle relish or diced pickled jalapenos
  • 1/2 Tbsp Wickles hoagie and sub relish found next to the relish - optional
  • Salt and black pepper to taste

Instructions

  1. Chop up the egg and mix in with the remaining ingredients, simple as that!

Recipe Notes

Makes 1-2 servings.

Notes: Beware! This has a kick! Up the ante by adding more zest or for a milder version, replace jalapenos with relish.

Enjoy!!

 

Way #1 – In a sandwich between two slices of toasted 100% Whole Wheat Nature’s Own Bread w/ baby spinach – a tomato in there would be awesome, too, but alas, I was fresh out.

Way #2: In a wrap! On a bed of baby spinach leaves and Trader Joe’s Habanero Lime Flour Tortillas (which are just amazing, btw – my hubby LOVES them) and once again, a tomato would be super yummy.

But wait! There’s a Way #3!  (updated 12/7/12) Simply as a dip w/ Wheat Thins Fiber Selects Garden Vegetable crackers. Yum.

Updated yet again on 4/2/13: Eating it a 4th way for lunch today. Served on a bed of spinach greens, shredded carrots and grape tomatoes with a side of cantaloupe and Kashi Original 7 Grain Sea Salt Pita Crisps

Just had to add the picture that Little Sis drew of my lunch in my ELB while she was waiting for me to finish up my lunch so I could teach her how to knit. LOL!! BTW, the knitting lesson lasted all of 5 mins.

Now she’s patiently waiting for me to finish up a knitted surprise for her American Girl doll. Not sure how she was able to rope me into that one, but alas, what sick girl wants, sick girl gets. 😉
