Pinwheel Sandwiches for Lunch

I’ve always loved pinwheel sandwiches and it recently occurred to me that my girls should try them. They’re yummy, look neat AND they have a cool name so what’s not to love, right? Well, despite these valid points, I wasn’t sure if the girls would like them because they are kids, after all! Well, much to my delight, Pinwheel Sandwiches for Lunch was a hit with both girls, especially Big Sis – which says a lot considering she’s my picky one. Woo hoo!

So here’s what I used to make these pinwheel sandwiches: my favorite deli meats and cheese, organic baby spinach, ranch dressing on top of Banderita’s Whole Wheat tortillas (my favorite brand because they’re so soft). Darn! I forgot to throw in some matchstick carrots and broccoli slaw, for added goodness, crunch and color pop, but alas, I forgot. Oh well, next time.

Once you’ve topped your tortillas, roll them up and slice them across. Ooops, I should’ve shown one of them sliced!

Pinwheel Sandwiches for Lunch:

  1. Pinwheel wraps made with Applegate ham and American cheese, spinach, and some ranch dressing, just the way Big Sis likes it!
  2. Pineapples and blueberries in one (Little Sis’) and popcorn in the other (sigh… at least it’s a healthy snack!)
  3. 100% Whole Grain Triple Berry Newtons
  4. Snack Factory’s Pretzel Crisps aka flat pretzels as we call em.
  5. Trader Joe’s Gummy Bears and Filled Jellies
  6. Organic Popcorn

Updated: Just HAD to inlcude this “after” picture. I’d say THAT went over well! Little Sis’ on the left – this is what her lunches typically come home looking like and Big Sis’ on the right. She said the popcorn was stale by the time she got to is this afternoon. Other than that, not too shabby at all!
