Corn Dog Muffin Minis

My girls, especially Big Sis, love corn dogs. I love them too, but I’m not a fan of what goes into most corn dogs. One day back in November of 2012, I was inspired by my very talented Bento Blogging Friend’s GORGEOUS post: Mommy Kiki Can’s Rilakkuma Corn Dog Lunch. Since then, I’ve seen a parade of these things go by on social media making my mouth water each time. Finally, Keeley McGuire and her Lunch Made Easy: Leftovers – Cook Once, Eat Twice! gave me the push to make some myself, once and for all! So, thank you, awesomely talented gals! With that, here are my Corn Dog Muffin Minis.

First, pictured are the ingredients with a batch ready to go in the oven.

Corn Dog Muffin Minis

Cornbread recipe adapted from Holly Hobbie’s Muffin Maker Game

Ingredients

  • 1 ¼ cups all purpose flour
  • ¾ cup yellow corn meal
  • 1/3 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 large egg lightly beaten
  • 2 Tbsp butter melted
  • 4 hot dogs each cut into 6 equal pieces (24 total)

Instructions

  1. Preheat oven to 400 degrees F. Grease mini muffin pans for 24 mini muffins.
  2. Combine flour, corn meal, sugar baking powder and soda and salt in a medium bowl. Whisk to blend. In another bowl, whisk together the buttermilk, butter, oil and egg to combine. Pour buttermilk mixture onto the flour mixture and stir until almost smooth. Spoon into the prepared pan.
  3. Place 1 piece of hot dog into the center of each muffin tin.
  4. Bake until muffins are puffed and golden, about 15 minutes.
  5. Transfer to a wire rack and cool 3 minutes.

Recipe Notes

Makes 24 mini corn dog muffins.

Now, a plate full of delicious corn dog muffins! I must admit, I think I ended up eating waaaaaay more of these than the girls did. For the record, these re-heat nicely from the fridge a day or two after and freeze well, too! 🙂

Finally, here are a couple dinners I packed for the girls.

First, Dinner 1:

  1. Corn Dog Muffin Minis
  2. Annie’s Homegrown Mac and Cheese
  3. Steamed Broccoli
  4. Homemade Alphabet Chicken Soup

Last, but not least, Dinner 2:

  1. Corn Dog Muffin Minis
  2. Homemade Mac and Cheese
  3. Trader Joe’s frozen peas, cooked w/ a dash of Kosher salt
  4. Organic carrots from Papa Spuds and ranch dressing

    I just made these for my kids…they're cooking as I type. I'm just curious. The ingredients list only has baking powder but the instructions mention soda. Is something missing?

    Always looking for something new! My girls cannot eat any fatty or spicy food, but this looks like something they can eat. They CAN eat turkey dogs. And it looks fun! Thanks for sharing.
