Zucchini Taco Boats

Zucchini Taco Boats are the perfect way to sneak some veggies into your sweeties’ diets and a great low-carb alternative to tacos that both adults and kids will love! I ran across an Instagram pic of these babies and had to make them asap, they looked SO good! They’re pretty quick and easy to make, as well.

I found the recipe to make these delicious zucchini taco boats at The Recipe Critic. I added some finely chopped onions and kale to the ground beef mixture to sneak in even more veggies. Why not? You’d never even notice the extra veggies what with all the cheese and toppings. Mmmmmm!

I’m definitely be making these again as both my hubby and I, as well as our girls, devoured them. My girls are now 15 and 12 and we’ve arrived at a place where both are really good eaters PLUS they are pretty open to trying new things. It’s actually FUN to cook for them! That took some work, though. While Little Sis was always a “good eater”, Big Sis was pretty picky and one who never ate much in once sitting. But once she hit 14, watching her eat is an amazing, beautiful sight!

We topped our zucchini boats with shredded lettuce, chopped tomatoes and avocados, sour cream, pickled jalapenos and taco sauce. Had I not already been to the store TWICE that day, I would’ve added cilantro and black beans to the mix for a fresh and even heartier meal. Next time, for sure! 🙂 And, of course you can also use ground turkey, pork or any meat substitute to really make it your own.
