Corn Dog Muffin Minis

My girls (especially Big Sis) love corn dogs, but I do NOT like what most corn dogs are made of. So one day, back in November of 2012!! (yes, I'm a little behind on some posts!) I was inspired by my very talented Bento Blogging Friend's GORGEOUS post: Mommy Kiki Can's Rilakkuma Corn Dog Lunch. Since then, I've seen a parade of these things go by on Facebook, so I thought I'd finally blog these babies up. Better late than never, I guess. :) I'll also give a shout out to Keeley McGuire's post: Lunch Made Easy: Leftovers - Cook Once, Eat Twice! which included these guys and inspired me to finally write up my post. So, thanks awesomely talented gals! :)

The ingredients:

Corn Dog Muffin Mini's

What you need:
Ingredients to make Cornbread Muffins
3 Hot dogs, each cut into 8 equal pieces (update: or more depending on how hotdoggy you want it)
24 mini muffin pan
cooking spray/oil

Follow the directions to make the batter Cornbread Muffins
Spray/coat muffin tins with oil.
Divide batter equally into 24 mini muffins.
Place a cut hot dog into center of muffin batter and push towards bottom.

Bake at 400 degrees for 12-15 minutes or until golden brown.


The plate full of corn dog muffins. I must admit, I think I ended up eating waaaaaay more of these than the girls did. :) And FYI: these re-heat great from the fridge the day after. I bet they'd freeze well, too! :)

Always looking for something new! My girls cannot eat any fatty or spicy food, but this looks like something they can eat. They CAN eat turkey dogs. And it looks fun! Thanks for sharing. I just made these for my kids...they're cooking as I type. I'm just curious. The ingredients list only has baking powder but the instructions mention soda. Is something missing?
