Chicken Filet Sandwich Lunch with Biscoff Cookies

This Chicken Filet Sandwich lunch saved me from crying tears of boredom from packing the same ol’ lunches today – lol.This is only our second week of school, but I’ve been packing lunches EVERY SINGLE DAY so far and am starting to get tired of making the same old thing. It probably doesn’t help that we only got a week off for “summer break” for our track in year round school. I’m not even the one eating them, so I can only imagine what the girls are feeling right about now, though I haven’t heard a complaint so far. But sometimes, it’s all about me (haha), so I checked to see what was on the school lunch menu. It was chicken filet sandwich. So I said to myself, Ok! I made my own using Perdue’s simply smart lightly breaded chicken tender strips and some of leftover hot dog buns. A perfect fit!

Chicken Filet Sandwich Lunch with Biscoff Cookies

In this lunch:

  1. Chicken Filet Sandwich on a leftover whole wheat hot dog bun
  2. Shredded carrots
  3. Pretzel Crisps with Laughing Cow Cheese
  4. Brothers-All-Natural Asian Pear crisps (2 whole servings of fruit and no gmo’s!)
  5. Raisins
  6. Biscoff cookies, my favorite airline food ever.
Our first “track out” (our first 3 week break) comes in just a week and a half, so I will do my best to hold on until then. And sorry the colors in this pic are soooo cooool. Big Sis is in middle school and her day starts an hour earlier which makes lunch pictures a little more challenging!Christine, aka happyvballgirl : )

    Just read your most recent post, and loved all the lunches. Perhaps there is a lesson in your remark about allowing the girls to have white bread this week-if the contents of the sandwich are good, and healthy, and they eat it all, including the crust – then maybe no harm no foul! With so many other healthy things in the lunch box, the bread may not be a problem – just a thought! We all have been hit with the "picky eater" syndrome these days, so white bread occasionally may actually be a win:win! 🙂 Thanks for the posts.
