Grandma’s Sugar Cookies

The weather has finally warmed up and there’s a lovely coating of yellow pollen on everything, inside and out. It’s spring! I thought what better way to celebrate the end of such a long winter than with some spring Grandma’s sugar cookies! And, sorry to those of you are still getting wintry weather – crazy!

To showcase these goodies, I made some Grandma’s sugar cookies. I found this recipe on the back of a set of Christmas Cookie Cutters I bought last year. The girls just rave about it, so it’s the one I stick with. The recipe is no longer available online, so I included it below. Grandma’s Sugar Cookies

From Good Cook’s recipe which is no longer available online, Christine aka happyvballgirl @ My Epicurean Adventures

Course Dessert

Servings 2 dozen cookies

Ingredients

  • 3 cups flour
  • 1 cup granulated sugar
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 sticks butter at room temp
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon extract
  • 1 large egg
  • 2 oz cream cheese
  • powdered sugar for dusting
  • icing and sprinkles for decorating

Instructions

  1. Place flour, baking powder and salt in a medium bowl and whisk to combine.

  2. Place sugar and butter in a large bowl and beat with an electric mixer until creamy and smooth. Add extracts, egg and cream cheese, beating to incorporate.

  3. Gradually add flour mixture and stir to combine. Divide dough in half and wrap tightly in plastic wrap. Refrigerate for at least 1 hour.

  4. Preheat oven to 350 degrees F. Line cookie sheet with parchment paper and set aside.

  5. Roll dough out to 1/4 inch thick on a powdered sugar-dusted work surface. Cut cookies into shapes. Sprinkle with decorating sugar if desired.

  6. Place an inch apart on prepared baking sheets. Bake until edges are golden brown, about 12 minutes.

  7. Remove from heat and let cool on baking sheet for 1-2 minutes before transferring to a wire rack. After cooling, cookies can be decorated with icing.

  8. For 3D cookies assembly, attach pieces with icing which acts as a tasty edible glue.

Little Sis and I found these cute cookie stencils at dollar section of Target. Little Sis was intrigued and REALLY wanted to make cookies with them. I thought sure why not, though I was a bit skeptical how well they’d turn out.

When decorating these, Little Sis was helping and accidentally spilled a bunch of sugar on her cookies, whereas I carefully sprinkled mine, making sure not to put too much on. Guess what? Hers turned out WAY better than mine, so from then on, we were both generous with the sugar to get that well-defined design. It also helped to carefully press the sugar into the cookie using your finger. Good job, Little Sis! She’s such a good little helper in the kitchen. You can see that these cookies have been carefully decorated and are ready to go in the oven.

Now, they’re cooling on my cookie racks. We were pretty happy with the way they turned out. I was a little pessimistic at how well these stencils would work, but I’m a believer now!

    Now THAT is neat! I have never seen a cookie stencil before. I wonder if other stencils would work, too. I make cards so I have some neat stencils but they are all tiny–I'd have to go in search of some bigger ones. Most of mine are for borders–and I've never used them because I'm not good with stencils… but putting sugar crystals onto a cookie with a stencil? That seems easy! And beautiful.
