Spinach Mozzarella Salad for ME

Somedays I pack myself a lunch to eat on the go on particularly busy days. After a full morning of volunteering in Little Sis’ class, an appointment and last-minute errands getting ready for vacation, I noticed I had the hunger shakes. I had gone too long without eating and it was starting to show! Good thing I had my lunch with me! I couldn’t wait to eat my Spinach Mozzarella Salad!

Spinach Mozzarella Salad

In this Spinach Mozzarella Salad lunch:

  1. Baby spinach salad with shredded carrots, baby bella mushrooms, mixed medley cherry tomaotes, dried cranberries topped with Aiello’s Original Marinated Celigene Mozzarella Cheese (in seasoned olive oil) all from Trader Joe’s
  2. 4% milkfat cottage cheese topped with applesauce
  3. Homemade granola bars

    Delicious and easy. I have made it several times using both fresh mozzarella and grated regular mozzarella.
