Sushi Roll Sandwiches

My dear wonderful awesome mom, who is always trying to get Big Sis, aka "Stick Girl" to eat, eat, eat shared with me this wonderful way of making sandwiches a couple years ago. She ran across it in some magazine, clipped it and was determined to make some for Big Sis back when she was in the peak of her picky eating. Big Sis is still not a champion eater like the rest of her immediate family (myself included - hee hee), but thankfully, she's gotten much better as she's gotten older. Anyway, Big Sis liked 'em then (yay!), but somehow I hadn't gotten around to making them again until just tonight. They've been in the back of my mind ever since my mom made them years ago so I finally decided tonight was the night!

Well, here they are, making their debut in my faaaaabulous EasyLunchboxes. Wonder what the girls are gonna think about 'em now... But it's kinda like Mexican food: same ingredients thrown together to look different and still taste great. :) They like my many other variations so they *should* like these too, but then again, they are kids and you just never know with them.

Here are the yummy ingredients I used:

And here's how I threw 'em together THIS time:

This is how they got packed up in my EasyLunchboxes:

And THIS is how they got sent off w/ my sweeties. Whaddya think!?!?

Hi there!

Thanks so much for stopping by! I got the lunch bags a couple years ago and a boutique. They are Stephen Joseph lunch bags but it looks like the styles have changed a bit - don't see this particular one on their website: But I have run across them at various boutiquey places - even saw some not that long ago at a hospital gift shop! Good luck on your search and hope your sushi rolls are a hit! :)
