Taco Salad for Lunch

While I was racking my brain to come up with new lunch ideas, it hit me! I had totally forgotten about the wonderful world of leftovers! So today’s lunch is dinner leftovers from our Taco Salad Night. It’s such an easy, delicious AND nutritious meal to take for lunch. Plus, it’s something different and nice to look at, which always helps. Variety is the spice of life!

Taco Salad for Lunch

In this Taco Salad for Lunch:

  1. Leftover tacos turned into nachos with cheese on a bed of lettuce and tomatoes with taco sauce and chips on the side
  2. Sweet cut up cantelope
  3. Chocolate chip granola bar
  4. 2 Girls Scout Cookies: A Thanks-A-Lot and a Thin Mint straight from the freezer
