Homemade Broccoli Cheddar Soup

I’ve always loved broccoli cheddar soup. Every time I go to Panera (which is a LOT with all the soccer games and tournaments my girls go to), it’s one of my two soups of choice when I get the half sandwich, half soup combo. My other fave is their creamy tomato soup. Mmmm.

Homemade Broccoli Cheddar Soup

Recently, I discovered that my girls really like this soup, too. How exciting! That meant, of course, I had to find a homemade broccoli cheddar soup recipe to make my own. I started with Sandy’s Homemade Broccoli and Cheddar Soup and tweaked it to suit my tastes. Both girls really like it even though it’s packed with all sorts of goodness. Broccoli, onions and carrots, oh my! I guess it helps that it’s accompanied by lots of cheese and milk, too. 😉

Homemade Broccoli Cheddar Soup

Adapted from Sandy's Homemade Broccoli and Cheddar Soup

Ingredients

  • 4 Tbsp butter
  • 1 small onion, diced
  • 4 Tbsp all-purpose flour
  • 2 cups milk, 2%
  • 4 cups chicken broth, low sodium
  • 4 cups broccoli, chopped finely if you don't want big chunks
  • 2 cups mild shredded cheddar cheese
  • 1 cup shredded carrots, further diced
  • 1/2 tsp celery powder (optional)
  • salt and pepper to taste (I use about 1 1/2 tsp salt)

Instructions

  1. Melt butter in large pot/dutch oven over medium-high heat.

  2. Add onion and saute until translucent, about 3-4 minutes.

  3. Whisk in flour and continue to stir until mixture turns golden brown, about 5 minutes.

  4. Very slowly add chicken broth, whisking vigorously to avoid flour chunks until smooth and all broth is added.

  5. Add milk, celery power and salt and pepper.

  6. Reduce heat to medium-low and simmer until mixture is thickened, about 10 minutes.

  7. Add broccoli and carrots and simmer until vegetables are tender, about 30 minutes.

  8. Reduce heat to low. Add cheddar cheese and stir until cheese melts.

  9. Enjoy!

This soup is the perfect lunch or dinner accompaniment. Below, it’s serve with chicken tenders, whole wheat pita bread and some canned carrots.

Homemade Broccoli Cheddar Soup

Last week, during Little Sis’ first week of track out, I ventured to hold a mini “track out camp” and watched two of her soccer buddies for four days. This meant lots of cooking and planning meals that kids would hopefully eat. I gave them some options and their first lunch of choice included homemade broccoli cheddar soup! Little Sis’ friends had never tried it before and were curious because she raved about it. It’s so nice to have your own personal food cheerleader.

I’m quite happy to report that all three kids finished their bowls and Little Sis went back for not only seconds, but thirds, too! Now that’s my girl! Along with that broccoli cheddar soup was everyone’s fave grilled cheese sandwiches and some healthy sides. Not bad for day one of Camp Christine!

Homemade Broccoli Cheddar Soup

This soup is not only great for meals at home, it’s great for school lunches, too. Simply pack some in your favorite thermos and send it with a sandwich. Whenever I do, it always comes back empty! So awesome, right?

In this lunch is are ham and cheese sliders, pretzels and hummus, Made Good nut-free/gluten-free snacks, a beef stick, grapes and broccoli cheddar soup in a thermos, of course! Packed in our EasyLunchboxes, it was a lunch that came back empty which put a big smile on this mama’s face.
