Salmon Teriyaki

My girls have been growing like weeds lately! Big Sis is 5′ 6.5″ and breathing at my neck. She grew over 4 inches the past year and I still find it a little startling at times. Little Sis is about an inch shorter than her at 12 and doesn’t like how we are almost eye-level. Haha.  Because of this especially, I’m trying get as much protein in them as possible. Fish is a great source of protein and something I’ve been trying to incorporate in our diets more but it just doesn’t come naturally. Salmon is such a great source of protein and packed with those healthy omega 3’s I hear about. But how to make more fish?! Salmon Teriyaki!

Well, I was pretty eager to try this recipe I found on Pinterest: Cooking Class’s Salmon Teriyaki. The girls actually like fish and, on a rare occasion, have been known to order it out, so I wasn’t too scared. The hubby isn’t a huge fan of salmon, though. “Too fishy”, he says, but he’s full of will power and will eat just about anything if he knows it’s good for him. The recipe was super easy to make and I was really excited when my girls just DEVOURED it. Even the hubby said it was good (for salmon). Since then, it’s literally greeted with cheers and then promptly gobbled up when I make it. Yay!!

This Salmon Teriyaki was served on a bed of rice made in my awesome rice maker, steamed asparagus and steamed carrots topped with some of the teriyaki sauce. Mmmmm. By the way, I think I must use my steamer insert about 5 times a week. I really don’t know what I’d do without it!

I’m not going to repost the recipe, but here are a couple of notes:

  1. If you don’t have fresh ginger or garlic on hand, just replace each with 1/8 tsp of the powdered version. Still tastes great.
  2. My salmon was on the thicker side and took over 30 minutes to cook so leave yourself enough time.
  3. As a rule of thumb, cook until fish is flaky or to an internal temperature of 145 degrees F.
  4. If you don’t have lemon juice like I didn’t the first time, you can use orange juice!
  5. Lastly, don’t over-cook your asparagus like I often do! haha.
