Shredded Chicken ‘n Waffles

My hubby and I have been laughing about “chicken n’ waffles” for years and years, ever since his bro told us about that California chain Roscoe’s Chicken and Waffles he’d read some 10+ years ago. None of us thought it sounded very appealing. Maybe it’s because I always pictured a giant greasy drumstick quarter sitting on bed of waffles and syrup. Never tried it either… until last night! And I gotta say, that Roscoe’s knows what they’re doin’! Here’s a slightly different take with Shredded Chicken ‘n Waffles.

Not sure what possessed me to make them. Oh wait, I do. It was that $20 of chicken that was right on the edge of spoiling but I didn’t have the heart to throw out, so I threw it in a crock pot to cook the heck out of in instead. I looked up a recipe I’d seen on Pinterest a while back and had to try it, if anything for the funny name: “Man-Pleasing Chicken” by Feast for the Eyes. This is actually an oven-baked dish but I thought why not?

Well, it was 7:55 am and I had to leave with Big Sis for an appt at 8:10 am. I barely read the recipe in my haste but this is what I threw together. I “forgot” to sprinkle w/salt and pepper because it wasn’t listed in the ingredients list and I didn’t actually read the recipe, but it still turned out pretty yummy without it. Just doesn’t look as pretty as the recipe’s picture. Well, mine looked nothing like the picture, but that’s because mine’s shredded.

Shredded “Man-Pleasing Chicken” in a Crock Pot
2 lbs chicken breast
1/4 cup pure maple syrup
1/4 cup dijon mustard
1 Tbsp rice wine vinegar

I threw it all in the crock pot on low for 8 hours. I didn’t even bother to mix it or nothing. 8 hours later, I just took two forks, shredded up the chicken and then left it on warm.

Then I took out my handy dandy waffle maker that we got for our wedding almost 17 years ago. I really want a new one, but the thing just won’t die! lol. Oh well, still makes tasty waffles. I used my tried and true Homemade Pancakes recipe, but omitted the sugar because I don’t think already kind of sweet chicken needs more sugar to go with it.

I gave the girls an early warning in the car when I picked them up from school. Told them it was “Try Something New Day” and that we were gonna have chicken and waffles. They both giggled. Big Sis asked, “Wait, what kind of waffles?” And knowing exactly what she was thinking, I replied, “Don’t worry, they won’t be blueberry waffles (or sweet for that matter) because that would just be weird.” And then she agreed to try them.

They wanted their chicken separate from their waffle so I made nice little piles of food on their plates. lol! I said it was fine to eat them all separately, but that I’d love it if they tried just a bite of chicken ON the waffle. In the end, I noticed that they both topped their waffles w/ chicken, dipped them in BBQ sauce and took bites like they were eating mini pizzas and managed to cleaned their plates. Oh yeah, the girls had a hankering for my Homemade Alphabet Chicken Soup, so I just took some out of the freezer and warmed it up so they could have of some on the side.

This is how Sweetie and I ate ours. I also warned him that I had something *interesting* planned for dinner and just go with it. After a few bites, I heard “WOW. This is reallllly goooooood.” Sweet! So it IS man-pleasing chicken, despite his initial disapproval of the maple syrup in the chicken that morning!!!

In these dinners:

  1. Homemade waffles with Shredded Man-Pleasing Chicken in a Crock Pot topped with my favorite Sweet Baby Ray’s BBQ Sauce
  2. Organic Edamame, lightly steamed and salted
  3. Cooked Organic Carrots
  4. The girls: Homemade Alphabet Chicken Soup (see below?)

    Oh my goodness my daughter was just telling me about chicken and waffles and I thought she was crazy!! When I saw your link I had to call her in here to see your recipe. How funny!     MMMM, Roscoe's!!! One of my all time favorite places to have fourth meal 🙂 haha! If you're ever down in So-Cal it is definitely worth trying!!!! I usually down my waffle in syrup then top with chicken… fantastic!! PS, yours looks great! Also definitely going to make the soup for my Laydbug 🙂

    This ALL looks fantastic. Did the chicken have a sweetness to it or would it work as a base in most savory areas as well? The kid's plate is great!

      Thanks so much, Sarah! Yes, the chicken did have a little sweetness to it, but it wasn't overpowering. I used less maple syrup than the original recipe called for and next time I may use a little less yet, but it lent itself surprisingly well w/ the BBQ sauce. GO figure! 🙂
