SPRY Living Magazine Healthy Lunch Post

I was SO excited and quite honored when Spry Living Magazine asked little ol' ME to contribute to a web article titled "10 School Lunch Ideas Your Kids Will Actually Eat" Hey! I actually know a little something about that! :)

Well, here's the lunch I submitted. I decided to go with one of my most popular lunch posts: Corn Dog Muffin Minis! What I LOVE about them is they are a typically unhealthy food made better. AND kids still like 'em! :)

  4. Peeled Snacks' Organic AppleClusters w/ Trader Joe's Organic Dried Cranberries for Big Sis and fresh black cherries for Little Sis (with stems on because that's the way she likes 'em)

I've included a link to the Corn Dog Mini Muffins recipe, but I must add that not only are they delicious (I have a really hard time stopping myself from eating my way through half a batch), they aren't awful for you like typical corn dogs are. These are made with Applegate's Natural Hot Dogs which are antibiotic-free, hormone-free and contain no nitrates (except for those that are naturally occurring in sea salt and celery)! On top of that, I made the muffins w/ organic corn meal (which I found at Whole Foods) and organic flour I buy from Target. Add in organic eggs and sugar, these are almost completely organic!

I make these ahead of time and either freeze or refrigerate them until use (what's left of them after I get done nibbling on them, that is). :)  If they've been in the fridge, I simply stick them straight into the lunchboxes and they are room temp by the time the girls get to them. If they've been frozen, I imagine you could probably do the same, depending on when lunchtime is. Or you could heat them up in the toaster oven, then stick them in the lunch box and once again, they'll be at room temperature come lunchtime. For those of you who have access to a microwave at lunch and prefer them warm, you could even nuke 'em on a paper towel right before lunch. I do have to say that I love them best right out of the oven, but kids seem to eat them at room temp just fine.

Corn Dog Muffin Minis
Cornbread recipe adapted from Holly Hobbie’s Muffin Maker Game

1 ¼ cups all purpose flour
¾ cup yellow corn meal
1/3 cup sugar
2 teaspoons baking powder
1/2 tsp baking soda
¼ teaspoon salt
1 cup buttermilk
1/3 cup vegetable oil
1 large egg, lightly beaten
2 tablespoons butter, melted
4 hot dogs, each cut into 6 equal pieces (24 total)

1. Preheat oven to 400 degrees F. Grease mini muffin pans for 24 mini muffins.
2. Combine flour, corn meal, sugar baking powder and soda and salt in a medium bowl. Whisk to blend. In another bowl, whisk together the buttermilk, butter, oil and egg to combine. Pour buttermilk mixture onto the flour mixture and stir until almost smooth. Spoon into the prepared pan.
3. Place 1 piece of hot dog into the center of each muffin tin.
4. Bake until muffins are puffed and golden, about 15 minutes.
5. Transfer to a wire rack and cool 3 minutes.

Makes 24 mini corn dog muffins.
