Spinach Artichoke Dip

Spinach Artichoke Dip – YUM! Not that long ago, we discovered that the girls actually liked spinach artichoke dip! The hubby and I ordered some for ourselves at “Friday’s” and were happily surprised when they gobbled it up. Instead of buying their brand found in the freezer section, I decided to perfect my own. Whenever I make it, it’s always to rave reviews, especially from Big Sis, which I just love love love!

So, here’s the recipe. It started from a yummy artichoke dip my sis-in-law Kris shared with me years ago. I varied it a little here and there over the years and this is what I ended up with. It’s a very flavorful, not ridiculously unhealthy version of spinach artichoke dip that even my girls love to eat. Hope you guys like it too!

Spinach Artichoke Dip

Adapted from Kris' Artichoke Dip by happyvballgirl @ My Epicurean Adventures

Ingredients

  • 1/2 cup sour cream
  • 1/2 cup mayo
  • 1 cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 14 oz marinated artichokes chopped
  • 10 oz box frozen chopped spinach I also love to saute fresh spinach in grapeseed oil and the garlic instead of using frozen spinach
  • 3 cloves garlic minced (raw or slightly sauteed, depending on how garlicky you like stuff!)

Instructions

  1. Mix all the ingredients in a bowl and transfer to baking dish. 

  2. Bake at 350 degrees F for 20-30 minutes, uncovered.

Spinach Artichoke Dip is great as an appetizer served with just about any type of tortilla chips or crackers. I also give it to the girls as an after-school snack on occasion. When I’m feeling kinda lazy, it will even count as the girls’ green veggie with dinner. I make it not just for parties, but just because, too. We’ll eat a little then and freeze the rest for later. Small 1 cup glass Pyrex containers are perfect for snacks and larger containers are perfect for last-minute entertaining. Later, I just take one out of the freezer, pop the lid off, stick in the oven and bake uncovered at 375 for about 20 mins. It’s that easy!

Just made another batch using fresh spinach from my CSA Papa Spuds. Oh man, it was my best yet! I just sautéed the spinach in grape seed oil and 3-4 cloves of minced garlic. WOW. Had to add my newest pics. Made some to eat today and froze the rest for later!

    This looks so yummmy! My kiddo also discovered a love for the dip at a Fridays! He cracked our waiter up once when he was 2 by begging me for spinach dip all the way to our table! 😀 Thanks for sharing this recipe, can't wait to make it!

      Haha, that's so funny, Jenn! They can form a "We Love Friday's Artichoke Spinach Dip Club". Does Kidlet also like their deep fried green beans? My girls started eating green beans deep-fried, sauteed AND even fresh thanks to them. 🙂
