Strawberry Banana Muffins

Sometimes I just wake up w/ a hankering for a good muffin. Of course, most days, I don't have 'em on hand, but that's not a problem w/ this delicious AND easy MOMables recipe I've been using: MOMables Blueberry Muffins. I'm often am able to just throw the ingredients together and have 'em in the oven within 10-15 mins - well worth the time in my opinion! This morning I happened to have some stashed in the freezer and just tossed them in the toaster oven for a quick warm-up. My coffee is ready and waiting as I blog this baby up. :)

To make the Strawberry Banana variety, I simply:
- replace the blueberries w/ 1-2 cups of diced strawberries (I used mine from frozen)
- add in a ripe banana or a frozen banana thawed
- added in my usual 2 Tbsp of wheat germ and...
- 2 Tbsp of ground flax seed

* I add the wheat germ and flax seed for some additional nutritional goodness (http://www.livestrong.com/article/481836-wheat-germ-flax-seed/)

and voila!

The one problem I run into a lot is when a recipe calls for "room temperature butter" which requires some pre-planning on my part. But since I can't always pre-plan when my muffin-hankering is gonna hit and I don't typically store butter at room temp, I take refrigerated butter, unwrap it and toss it in the microwave for 28 seconds on 60% power (or thereabouts, depending on your microwave). Definitely fine-tune it for your needs, but even if it melts a little too much, I still just throw it in there. :)
