Cooking With Friends – Easy Samosa Recipe

A couple months ago, on a “hangout with my buddy Thursday”, my buddy Cat and I made this Easy Samosa recipe. When our girls were just babies, we used to get together every week to cook dinner together while our girls napped and then enjoyed the meals together with our families! It was a cherished time in our lives. Over time as our girls grew and schedules diverged and I had a second baby, we weren’t able to cook together as much. But now that Little Sis is in kindergarten, this special time got added back into our schedule. It’s always fun to cook w/ a friend – especially when it’s interruption free!

Easy Samosa Recipe

Honestly, I’m not sure how authentic these are, lol, but my family and I just love them. And they get rave reviews when I make them for others. In fact, Cat specifically requested that we make a couple batches of this easy samosa recipe! I started with Epicurious.com’s Potato Samosa Tartlets recipe but made several changes to it along the way, mostly to simplify things. I’m all about making things easier! In particular, I replace some fresh ingredients with canned or dried alternatives and use pre-made pie crusts. Now there are certainly times when you want to go the extra mile (like making that homemade pastry) but mostly, I prefer to make things with items I already have on hand as quickly as possible. Easy Samosas

Course Appetizer

Ingredients

  • 2 Tbsp cooking oil
  • 1 onion, minced
  • 7 oz can chopped green chiles
  • 1 tsp ground ginger
  • 2 tsp curry powder
  • 1/2 tsp cumin
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 2 large boiling potatoes (~1 lb), cubed, boiled and roughly mashed (~2 cups) you can peel them or not. I usually don't
  • 1/3 cup diced tomatoes, drained if using canned
  • 2 Tbsp plain yogurt
  • 1 cup frozen peas
  • 2 pkgs pie crust (ie 4 rounds crusts total), thawed
  • 1 egg
  • 2 tsp water

Instructions

  1. Pre-heat oven to 400 degrees F.

  2. In a medium-sized pot, boil water with some salt and add potatoes. Cook for about 10 minutes or until tender-ish. Rinse in cold water and mash it up slightly.

  3. While the potatoes are cooking, heat oil in large skillet or wok over medium heat and saute onion, chiles and next 8 ingredients (ie all the spices) until onions are softened.

  4. Add tomato, yogurt and peas (frozen is fine) to the onions and mix until fully combined. Incorporate potatoes into the mixture.

  5. Prep your pie crusts by laying them out flat on an even surface and cutting them evenly into 6th pizza-like slices.

  6. Add a heaping tablespoon of potato filling to the middle of each "pizza slice" and crimp edges together into a pyramid shape. Be sure to push the filling into the corners.

  7. Place samosas on a greased baking sheet or one lined with parchment paper apply

  8. In small bowl, beat egg with 2 teaspoons to make an egg wash. Brush the samosas with egg wash.

  9. Bake at 400 for about 10-15 minutes or until crust is golden brown.

  10. Serve with mango chutney. Enjoy!!!

Recipe Notes

Make some to eat now and freeze the extras before baking them. Simply freeze them on a flat surface like a plate or cutting board. Once frozen, store them in a freezer storage bag!

You can defrost them in the fridge ahead of time or bake them from frozen, just be sure to add extra time for baking.

So here’s our lunch, served with a side salad. We *might* have had more than one each. <winky face emoji>. But most certainly, we enjoyed this lovely meal in each other’s company!

I love to have samosas on-hand for whenever I make my butter chicken. They just complete the meal!

What’s totally awesome is that you can make a bunch and then freeze (before baking) what you don’t plan on eating. That way, you can always have some on hand when you make butter chicken! When cooking them, reduce temperature to 375 and just add about 10-15 mins of bake time since they’re frozen. Or you can thaw them in the refrigerator overnight and use the same bake temp and time the recipe calls for.
