Chocolate Chip Pecan Pie

Chocolate Chip Pecan Pie

For the record, my hubby and I LOVE pecan pie. We love it even more with chocolate chips! I ran across recipe before we had kids and it is, hands-down, one of our all-time favorite pie recipes in the whole wide world. It’s seriously THAT good! It used to be a part of Thanksgiving dinner with family. My family loves pecan pie, too!

But then out popped our sweet little girls and they somehow BOTH ended up being allergic to nuts! Little Sis is severely allergic to peanuts. Supposedly most tree nuts are ok, but I never dared to test that out especially with so much cross-contamination. Big Sis is severely allergic to tree nuts, especially, cashews, pistachios and macadamias – all the delicious ones. She’s mildly allergic to a couple others, but pecans and peanuts are ok!

I made pecan pie one more time over the holidays when hosting family, post-kids. While everyone was super careful and we kept it separete, it made me too nervous to have around even though of all tree nuts, pecans are probably the safest to have around. So, Chocolate Chip Pecan Pie no longer makes appearances over the holidays to be shared with friends and family. But it does make occasional night time appearances for the hubby and me to enjoy.

On the occasion that Hubby says he could really go for a chocolate chip pecan pie, guess what? I JUMP at the chance and whip one up. Though the baking time is long (close to an hour), it takes less 15 minutes to throw in the oven from start to finish if you skip the fancy pecan dipped chocolate part. It’s definitely spur-of-the-moment do-able! But I ONLY make it after they’re safely tucked into bed and sound asleep. And It’s ONLY be eaten during this time or when they’re not around.

So here’s the recipe: Pillsbury’s Chocolate Pecan Pie. Serve it with a dollop or huge scoop of homemade whipped cream. Vanilla ice cream is SO good with it too, but watch out, waistline!
