Rest Stop Lunches

As we were getting ready to head out-of-town yesterday for a weekend of fun with friends, my brilliant hubby suggested we stop for a rest area lunch to enjoy the absolutely gorgeous weather we were having. So just like that, we got busy packing rest stop lunches. Hubby took care of ours while I handled the girls’. Don’t we make a great team?

Here’s one of the delicious salads Hubby made. Despite the picture, these babies were HUGE!

Rest Stop Lunches

In this salad:

  1. Organic Baby Spinach
  2. Broccoli Slaw
  3. Shredded Carrots
  4. Grape Tomatoes
  5. Baby Bella mushrooms
  6. Leftover Chicken Breasts brined, seasoned and grilled perfectly (for once! haha) by the hubby
  7. Sunflower seeds
  8. Dried Cranberries
  9. Topped with some leftover Couscous Salad, the icing on the cake!!

And here’s what I packed for the girls:

In these rest stop lunches:

  1. Sub sandwiches on Cobblestone Philly-Style Hoagie Rolls with Applegate ham and muenster cheese and shredded lettuce on Little Sis’ and Applegate Turkey and American cheese with shredded lettuce and mayo on Big Sis’
  2. Steamed broccoli
  3. Carrot sticks
  4. Bugles
  5. Rice Krispies Treats

After all that packing of lunches we packed the cooler and car. We were finally ready to hit the road which is never an easy task!

Indeed, the day was gorgeous as we munched on our lunches so thank you Sweetie, for your brilliant idea!
