Homemade Egg McMuffin

Homemade Egg McMuffin, made healthier with wholesome ingredients but just as delicious!

This morning Little Sis was not a happy camper because I had mistakenly told her that she could have a play date with her buddy after school today. Sadly, she had missed out on a super fun play date yesterday because of soccer practice. Well, I had a brain malfunction and realized last night that, OOPS, she had soccer practice today, too! I don’t know what I was thinking since she’s only had this soccer practice every week for almost a year now!

Well, I broke the news to her as gently as I could but despite my efforts, the dreaded words “I hate soccer practice!!” reared their ugly heads. I had some quick making up to do. Half jokingly, I had asked her if she wanted candy for breakfast to which she sadly replied, “No”. How about soda? No. A pop tart? Cake? Waffle? All no’s. Well, what WOULD you like for breakfast? “A homemade Egg McMuffin”. Wow, that was easy. I was more than happy to whip one up and let her watch her Minecraft Stampy Longnose videos on her iPad while eating breakfast. Sometimes you just gotta bend the rules.

I’m happy to say she went to school with a belly full of this healthy breakfast, happy and no longer hating soccer practice. Whew! That was a close call!

It was as easy as pie to make this delicious breakfast. I even made one for myself! Not a bad way at all to save the day.

In this breakfast:

  1. Bay’s Whole Grain English Muffins, warmed but not necessarily toasted
  2. 1 organic fried egg.
  3. 2 slices of fried Applegate ham
  4. 1 slice of Applegate American cheese
