About

Hi there! I’m Christine, a former hardware engineer turned stay-at-home mom living in beautiful North Carolina. Welcome to My Epicurean Adventures, a little blog about my adventures in trying to raise a happy, healthy family and having as much fun as possible along the way. Along for the ride are my very supportive hubby aka Sweetie and two funny “little” girls. They keep us pretty busy with all of their sports and activities. And ok, I kinda lied. I’m not a true foodie like the word “epicurean” implies. It just sounded really cool when I first started this blog. I’m not very fancy at all, though sometimes I try… a little. I’ll consume and like pretty much anything. Basically, I just love to eat food and cook it here and there, too.

About Me

I started this blog when my younger daughter started kindergarten. By that time, I was packing lunches for two. Big Sis is pickier and doesn’t eat a whole lot. Little Sis is an eat-anything, everything and a lot of it kinda girl. Both allergic to peanuts and/or tree nuts. I started packing their lunches in pre-school because of their allergies and have continued to do so. The girls actually prefer it now despite my occasional efforts to make them buy school lunches. I’m happy to report that pickier kids can get less picky over time. Big Sis is a prime example! After relentless pursuit of healthier eating habits, both she and Little Sis have been reported to make healthy eating choices on their own and have even expressed appreciation of it! *gasp!* And Big Sis LOVES to eat now!

This blog has been a fun and creative outlet for me to share with you the simple and sometimes even interesting lunches I pack for them. Now that my girls are older, life has gotten much busier and more hectic with all of our after school sporty and musical endeavors. In an effort to not let convenience compromise eating healthy(ish) home-cooked meals, I’ve learned to cook more simply and efficiently without sacrificing taste and wholesomeness as much as possible. Trying to make food a little bit healthier by sneaking in this and taking out that has become kind of a fun game. More and more, I’ve been using this blog as a way to keep track of my family’s favorite recipes, some of which are just links to tried and true recipes we love and some that I’ve created or added my own touch to.

With all the running around and watching my girls play sports, I’ve definitely let my blog gather dust, but it’s time to do some spring cleaning. I plan to clear out some old posts, update the good ones, tidy up the overall look of it and try to provide easier access to the good stuff.

Here’s one of my favorite pictures of us, biking around the Biltmore Estates in Asheville, NC.

And here’s a more recent picture of me and my sweeties after rafting trip in the New River Gorge.

Eat, drink, be merry, cook, organize, blog, travel, volleyball and last but mostly, have fun with my family. That’s what I love to do. ♥

Thanks so much for stopping by! Feel free to make my day by leaving me a comment, following my blog via email, on Facebook or on Instagram – the more the merrier!
