Beef Empanada Lunch

Hi there! I thought it was high time to post another lunch. But, not all lunches I pack are for my girls. Every once in a while, I’ll actually pack one for myself. Meet my beef empanada lunch from a week or two ago! I was heading out to a busy day of allergy shots and errands. Instead of hitting the drive-thru which I knew I’d do if I got hungry, I decided to take a lunch instead. Not only is it better for me, it saves me some money, too!

Beef Empanada Lunch in Easylunchboxes

In this lunch:

1. Beef and cheese enchilada leftovers from the night before, re-heated in my toaster oven with salsa
2. A slice of The Best Carrot Cake I’ve ever made
3. Homemade Granola Bar
4. Broccoli, cherry tomatoes and carrots with ranch dressing

For the record, this beef empanada lunch was made in the peak of my carrot cake addiction where I ended up eating a large majority of the 9″x13″ cake I had made. I simply couldn’t go a day, or even several hours, without any. Basically, this means some days I snuck in a second (or even THIRD!) piece! Eek!

That’s why I packed some veggies, too, to offset that cake. But come to think of it, it’s CARROT cake, so that’s good for me, right? Haha.

Anyway, I’d been on a cooking tear having all this stuff around. It certainly makes packing lunches easier and I feel better knowing they’re getting some good stuff in there.
