Baked Pumpkin Donuts

Baked Pumpkin Donuts

Yesterday morning, I woke up to the most delicious looking Instagram post from King Arthur for Baked Pumpkin Donuts. I immediately knew THIS was what I was going make for my rainbow loom exchange. Rainbow loom exchange you ask? Well, last week, I had posted this picture of the girls and their renewed interest in their Rainbow Loom. Then my friend, mom of Big Sis’ classmate, commented that the girls could have her son’s loom, if they wanted, since it had been a year since he last touched his. Of course I jumped at the chance, because the girls had been sharing one, quite nicely, might I add, and I had actually been considering getting them a second one. Ah the wonders of Facebook!

So, I replied yes, thank you and what treat can I make you in return? Turns out her son is a lover of all things pumpkin, so these were just perfect!! With that, I got up and got busy right away on King Arthur Flour’s Pumpkin Cake Donuts Recipe. The awesome thing is that it’s a simple and quick recipe and I just happened to have all the ingredients on hand. Yay!

Instead of using the fine cinnamon sugar mix they linked in the post to purchase, I just made my own using my favorite ratio: 1/2 cup sugar + 1 Tbsp cinnamon. And since I didn’t use fine sugar, it just wasn’t sticking to the donuts like the recipe showed, so I improvised a little. I melted 1.5 Tbsp of butter, brushed a little on each donut, one at a time, one side at a time and dipped into the sugar after each coat. They turned out just great!

This recipe ended up making 16 donuts (note: only 15 are pictured here due to some mandatory taste-testing). Verdict: So moist and tasty, perfectly sweet (ie not too sugary) with just the right amount of pumpkin. Yum.

Later that morning, Big Sis and I handled the exchange while Little Sis was out at the grocery store with Daddy to pick up some treats for their Y-Guides Fall Outing last night. Big Sis was SOOO excited to surprise her Little Sis with the new Rainbow Loom. I think it’s safe to say that she was too, don’t you?
