Easy Samosas

Ingredients

  • 2 Tbsp cooking oil
  • 1 onion, minced
  • 7 oz can chopped green chiles
  • 1 tsp ground ginger
  • 2 tsp curry powder
  • 1/2 tsp cumin
  • 1/4 tsp ground cloves
  • 1/4 tsp ground cinnamon
  • 1 tsp ground coriander
  • 1 tsp salt
  • 1/8 tsp black pepper
  • 2 large boiling potatoes (~1 lb), cubed, boiled and roughly mashed (~2 cups) you can peel them or not. I usually don't
  • 1/3 cup diced tomatoes, drained if using canned
  • 2 Tbsp plain yogurt
  • 1 cup frozen peas
  • 2 pkgs pie crust (ie 4 rounds crusts total), thawed
  • 1 egg
  • 2 tsp water

Instructions

  1. Pre-heat oven to 400 degrees F.

  2. In a medium-sized pot, boil water with some salt and add potatoes. Cook for about 10 minutes or until tender-ish. Rinse in cold water and mash it up slightly.

  3. While the potatoes are cooking, heat oil in large skillet or wok over medium heat and saute onion, chiles and next 8 ingredients (ie all the spices) until onions are softened.

  4. Add tomato, yogurt and peas (frozen is fine) to the onions and mix until fully combined. Incorporate potatoes into the mixture.

  5. Prep your pie crusts by laying them out flat on an even surface and cutting them evenly into 6th pizza-like slices.

  6. Add a heaping tablespoon of potato filling to the middle of each "pizza slice" and crimp edges together into a pyramid shape. Be sure to push the filling into the corners.

  7. Place samosas on a greased baking sheet or one lined with parchment paper apply

  8. In small bowl, beat egg with 2 teaspoons to make an egg wash. Brush the samosas with egg wash.

  9. Bake at 400 for about 10-15 minutes or until crust is golden brown.

  10. Serve with mango chutney. Enjoy!!!

Recipe Notes

Make some to eat now and freeze the extras before baking them. Simply freeze them on a flat surface like a plate or cutting board. Once frozen, store them in a freezer storage bag!

You can defrost them in the fridge ahead of time or bake them from frozen, just be sure to add extra time for baking.
