Homemade Ice Cream Cookie Sandwiches

Ingredients

  • 24 2"-3" sized chocolate chip cookies
  • 1 half gallon carton of vanilla ice cream
  • mini chocolate chips, sprinkles, etc

Instructions

  1. Match up similar sized cookie pairs and set on a plate or other flat surface.

  2. Remove the ice cream from the container onto a cutting board.

  3. Cut a 1.5" (or whatever thickness you'd like) slice of ice cream.

  4. Cut circles using a ~2.5" round cookie or biscuit cutter and place them on to half of your cookies. Ice cream remnants can be re-formed by fitting into cutters, if using.

  5. Place second cookie on top and press it down with your fingers until the ice cream spreads to the edge of your cookies.

  6. If ice cream has melted too much, put assembled cookie sandwiches into freezer for 30 mins to an hour and then proceed to the next step.

  7. Dip the sides in your "side toppings" of choice.

  8. Place in freezer until the ice cream has stopped melting and has hardened enough to put in a Ziplock bag or container, about 1 hour.

  9. Freeze for 1-2 days before enjoying!
