Cinnamon Roll Pancakes

Ingredients

Pancakes:

  • 1 cups all-purpose flour I used 1/4 whole wheat flour and 3/4 cup all-purpose flour
  • 2-3 tsps baking powder
  • 1/2 tsp. salt
  • 1 Tbsp ground flax seed (optional)
  • 1 Tbsp wheat germ (optional)
  • 1-2 Tbsp protein powder (optional)
  • 1 cup milk (or more for desired consistency)
  • 1 tbsp vegetable oil
  • 1 large egg lightly beaten

Cinnamon Filling:

  • 1/4 cup butter melted
  • 1/3 cup brown sugar packed
  • 1/2 tbsp ground cinnamon

Glaze:

  • 1/3 cup powdered sugar
  • 1 Tbsp milk
  • 1/4 tsp vanilla
  • 1/2 Tbsp melted butter

Instructions

Cinnamon Filling:

  1. Mix together melted butter, brown sugar and cinnamon in small bowl.

  2. To dispense the filling, fill either a ziplock bag with a tiny piece of the corner cut out or a squirt bottle with the cinnamon filling.

  3. The filling will most likely start out pretty drippy, so place on a small plate when not in use. It will then slowly thicken, to the point where it won't easily flow from your tip. So finicky! Simply place under warm water for a short time to melt it down a little again.

To make the Glaze:

  1. In a microwave safe bowl melt the butter. Whisk in the powdered sugar and vanilla. Add a little milk if needed to make it a glaze consistency. Drizzle with spoon or place in a 2nd squirt bottle.

To make the Pancakes:

  1. Mix the dry ingredients in one bowl and the wet ingredients in another bowl. Stir them together until everything is moistened leaving a few lumps.
  2. Heat pan on med-low heat. You don't want these to cook too quickly and you won't want your cinnamon to burn.

  3.  Make desired size pancake on greased griddle. Quickly, starting at the center of the pancake, create a cinnamon swirl. 

  4. Wait until the pancake has lots of bubbles in it before you flip it. You'll find that when the pancakes are done, the cinnamon swirl will melt. This creates craters which the glaze will fill. Take care not to burn cinnamon.

  5. Place cooked pancakes on place, cinnamon side up. Drizzle with glaze and enjoy!

Makes about a dozen medium sized pancakes, perfect for this family of 4.
