Chocolate Mousse Filled Cupcakes

Yesterday, I got it in my brain that I wanted to make some chocolate mousse filled cupcakes to take over to some friends’ house. Actually, the thought started out as a layer cake with a chocolate mousse layer and then morphed into filled cupcakes. Cupcakes just sounded more exciting to me at the moment, so this is what I threw together, using my new favorite cupcake recipe from Pastry Affair. It’s moist and delicious – you gotta check it out: Pastry Affair’s Vanilla Cupcakes.  

Definitely knew I wanted chocolate mousse filling but also knew I didn’t want to mess with raw eggs, so I found this uber easy recipe from Food.com. Ridiculously easy and makes a super yummy filling: Food.com’s Easy Mousse Cake Filing, Any Flavor. I used Jell-o Chocolate Fudge Instant Pudding and Organic Valley Heaving Whipping Cream. Mmmm.

And then, of course, I needed to figure out how to actually fill these babies. This is where I learned how to make them: Annie’s Eats: How to Make Filled Cupcakes. Using the simple knife technique worked out quite well!

I really wanted to make my own frosting, and even did, but was not happy with the way it turned out. I have yet to find myself an amazing vanilla frosting recipe. Whipperberry’s Simple Vanilla Buttercream Recipe is one I often use, but Little Sis just isn’t a buttercream fan. Please feel free to share if you know of one that I could try! So with the clock tickin’, I went to my go-to store-bought Betty Crocker’s Whipped Vanilla Frosting. It is seriously my favorite frosting and it tastes SOOOOO good and always comes out so pretty. Thank goodness I always keep some on-hand! Which reminds me, I have to update my grocery list!

To give you an idea about ratios:
2 batches of cupcakes (about 32) + 1 batch of chocolate mousse filling + 2 tubs of frosting = 36 cupcakes, with a little frosting to spare

I started them at about 11am, of course had to run to the grocery store to pick up a couple items and they were ready to go by 1pm. Not too shabby if I do say so myself! Here’s the batch I packed up to take over. The ones with blue sprinkles are not filled, just in case someone wasn’t a fan of chocolate mousse (like Little Sis):

I must say, these were a big hit by all, except Little Sis. Poor little thing has yet to try one because she hasn’t been feeling well. Don’t worry, we’re saving her one!

Anyone have any ideas what I can do with the scooped out cupcake parts, aside from eating them up slowly, which is what I’ve inadvertently been doing? Maybe cake pops?!?!?

I made yet another batch and took some new pictures to share. The white topped ones are the Chocolate Mousse Filled Cupcakes. The pink sprinkle ones are just plain vanilla cupcakes because that’s what Little Sis prefers and the ones to the right are…

    So…yeah. If you need a taste-tester I am available! Although I would have rolled the scooped out parts into one big sphere then eaten it like an apple, you could use it as the base for a shortcake-type recipe?
