Grilled Salmon with Tomatoes, Spinach and Capers

My dear mother-in-law aka Nana is a very busy Nana with boundless amounts of energy. I don’t know how she does it all but she works, loves spending time with grandkids, cleans like no other, loves to help with home projects, travels the world, spoils her children and their mates, gardens, and even cans tomatoes! And that’s just to name a few. This is a batch she recently brought for us and what I used to make Grilled Salmon with Tomatoes, Spinach and Capers. I totally hit the jackpot as mother-in-laws go.

One of my favorite recipes to make with Nana’s tomatoes is The South Beach Diet’s Grilled Salmon and Tomatoes, Spinach and Capers. It is OH SO GOOD, especially when you make them with tomatoes as fresh as these. Unfortunately, Nana doesn’t like fish, so I made this for my parents when they came to visit, along with a side of grilled asparagus and white rice. Yes, white rice because it is my parents’ absolute staple and favorite.

This is salmon for my parents. They LOVE salmon.

And here’s Aj’s Grilled Asparagus Recipe that my dear aunt (aka Aj) shared w/ me years ago. It’s simple, it’s delicious and my girls LOVE it. I’ve been making it this way ever since. Thanks Aj!
