Even though my kids aren’t little anymore, I still love making every day foods for them (and my hubby) a little healthier. My newest endeavor is these DELICIOUS zucchini waffles (and pancakes). They are incredibly moist on the inside but perfectly crispy on the outside. Plus, you’d NEVER KNOW they packed with all sorts of healthy goodness. Shhhhh! It can be our little secret. ; )

I often make a double batch because these zucchini waffles (and pancakes) are easy to freeze and reheat well. Simply wait for them to cool, place them in a freezer bag and stick in your freezer! You can reheat them in a toaster, oven, toaster-oven, air-fryer, or in a pan.

Zucchini Waffles (and Pancakes)
These healthy and delicious Zucchini Waffles and Pancakes are a must-try and sure to be a hit. You'd never even know it's packed with so much goodness!
Ingredients
Waffles and Pancakes
- 1 cup flour I use a 3:1 ratio of white : whole wheat
- 1.5 Tbsp ground flaxseed (optional)
- 1.5 Tbsp wheat germ (optional)
- 1 Tbsp baking powder
- 1/2 tsp salt I use kosher
- 1 cup milk
- 1 Tbsp unsalted butter (melted)
- 1 large egg
- 1 tsp vanilla extract
- 1 cup zucchini, grated and squeezed 1 cup ~ 1 small zucchini
- 1 Tbsp cooking oil (plus more for frying if making pancakes) I use avocado oil
Topping Ideas
- Butter, syrup, fresh fruit like bananas & berries, chocolate chips, whipped cream, even ice cream! 🙂
Instructions

In a large bowl, add dry ingredients (flour, flaxseed, wheat germ, salt and baking powder) and whisk together thoroughly.

Add remaining ingredients (including oil) and mix well.

Preheat Belgian waffle maker to medium-dark (the setting between medium and dark). Once heated and ready, place 1/2 cup of batter into 1 waffle section to do a test batch. Mine works perfectly at this setting but yours may need adjusting. And I do NOT spray my waffle maker. This makes it very gummy over prolonged use and hard to clean. Most waffle makers today seem to be oil-free and make great waffles without sticking.

Cook until waffle maker beeps ready. Check to see waffle is nice and browned. Leave in for a little longer if not quite ready or remove immediately using silicon tongs. Adjust waffle cook settings accordingly.

Waffles are BEST enjoyed hot off the iron, but if you need to pre-make them, place them in a single layer on a baking pan with cooling rack and warm them in a 180 degree F oven. This way, they stay crispy and not soggy.

For pancakes, pre-heat pan on med-high, add oil and cook pancakes until crispy on both sides and not gooey in the center.

These zucchini waffles (and pancakes) are best when consumed hot off the iron – mmmmm, so crispy on the outside and moist on the inside. And, butter melts instantly! But if you’re cooking for a large crowd, that can be harder to do. A simple trick I often use to keep waffles fresh and not soggy is to place the waffles in a single layer on a 11×17 baking sheet with cooling rack and warm in the oven set to 180 degrees F. This way the waffles stays warm and crispy on the top AND bottom.

I’ve had this Calphalon No-Peek Belgian Waffle Maker for over 10 years now and it’s still going strong! No oil necessary and waffles still don’t stick! Spray oils can leave a sticky residue that’s extremely hard to clean over just a few uses. But I do add some oil to the batter to prevent sticking. Although this waffle maker is no longer available, others I see seem to be very similar.

If you’re me the “grating zucchini” part makes me go “ugh”. Grating anything, actually, but my KitchenAid mixer helps me get over that. This grater/shredder attachment makes grating just about anything so quick and easy – no worries about having to grate any fingers accidently while getting the very last bit. I use it for veggies, cheese and even frozen butter! There is some clean-up involved and it’s heavy AF, but I love how quickly it grates things without that arm-numbing repetitive motion.
