Easy Pan Fried Sweet Potatoes

Easy Pan Fried Sweet Potatoes

I have always enjoyed a nice sweet potato as a healthier alternative to baked potatoes. Never mind that it involved lots of butter, sugar and cinnamon. My family, not so much. But slowly, one by one, I’ve won them over to the sweeter, healthier side. Especially with these Easy Pan Fried Sweet Potatoes!

First was the hubby, who is just a ball of will power and can make himself eat just about anything for the sake of being healthy. He actually REALLY likes them now which is so funny considering how much he used to dislike them. Then as Big Sis watched us enjoy them over the years, she started to like them more, too. Little Sis was the lone hold out – for the longest time, until one day last year when I tried something different and made Fried Sweet Potatoes. In BUTTER. Who could resist that? Now, even Little Sis is an enjoyer of sweet potatoes! My mission is complete!

You can serve them along side pretty much anything, but here we had them with turkey burgers! The family just gobbled this dinner up.

In this dinner:

  • Butterball frozen turkey burgers loaded with cheddar cheese, lettuce, tomato, avocado, mayo and ketchup on a Martin’s Potato Bread sandwich roll.
  • Trader Joe’s mozzarella sticks
  • Steamed broccoli
  • Fried sweet potatoes!

Mine is on a Romaine lettuce leaf because I’m very health-conscious and it’s lower carb. Actually, it’s because we only had 7 buns and 8 patties and wanted to save it for another day. Lol. I went to the grocery store that day hoping to not have to go back for almost 2 weeks. No challenge at all considering I probably went to, on average, about 4-5 different stores a week to do my grocery shopping pre-coronavirus!

Easy Pan-Fried Sweet Potatoes

Course Side Dish

Ingredients

  • 2 large sweet potatoes, cubed
  • 3 Tbsp butter
  • 2 Tbsp olive oil
  • 1/2 tsp salt, to taste
  • 1/8 tsp pepper

Instructions

  1. Melt butter in large skillet over Med to Med-High heat.

  2. Add cubed sweet potatoes and drizzle oil. Toss to coat evenly with butter and oil. Let the sweet potatoes brown on one side for about 3-5 minutes.

  3. Flip sweet potatoes over, cover with lid and lightly brown the other side for another 3-5 minutes or until softened but not mushy.

  4. Reduce heat to Low to Low-Med heat, remove lid and toss sweet potatoes with spatula for a about 3 minutes or to desired crispiness.

  5. Serve as a side with just about anything!
