Tracking Back In With Mini Sub Lunches

Today is the girls’ first day back to school after being tracked out for 3.5 weeks (they go to a year-round school). On the school lunch menu just happens to be their fave mac and cheese and corn dogs yet both wanted to take lunch! Awww…. so I made them Mini Sub Lunches after seeing Kelly over at EasyLunchboxes sharing an older post of mine. How funny I inspired myself today – haha!
Mini Sub Lunches

Following is Little Sis’ version of the Mini Sub Lunches is complete with fresh fruit:

In this lunch:

  1. Mini Sub Sandwich using Nature’s Own 100% Whole Wheat hot dog buns with Applegate Roasted Chicken, salami and Provolone cheese and lettuce
  2. Baby Carrots with Marzetti’s Simply Dressed Ranch Dressing
  3. Fresh strawberries
  4. Cheese Its (White Cheddar)
  5. Laughing Cow Herbed Cheese and Wheat Thins
  6. Fancy Pants Bakery’s Nut-free AND organic chocolate chip cookies

And Big Sis’ with dried fruit:

Mini Sub Lunches

In this lunch:

  1. Mini Sub Sandwich using Nature’s Own 100% Whole Wheat hot dog buns with Applegate Roasted Chicken and American Cheese, lettuce and mayo
  2. Baby Carrots with Marzetti’s Simply Dressed Ranch Dressing
  3. Peeled Snacks Cinnamon Apple Clusters
  4. Cheese Its (Original)
  5. Laughing Cow Herbed Cheese and Wheat Thins
  6. Fancy Pants Bakery’s Nut-free AND organic chocolate chip cookies

The post-lunch report: the mini subs were a HIT – yay!

Mini Sub Lunches
Track-back-ins are certainly bittersweet. As much as they keep me busy during this time, I miss their little faces and happy playing sounds when they’re not around. While I’ll get some stuff done around the house, I’m gonna miss my girls!

    Awww, thanks so much, Jennifer!! Hot dog buns make the perfect size subs for us – just the right amount of bread because we aren't into tooo bready subs around here. 😉 THanks so much for stopping by!
