Strawberry Shortcake

Strawberry Shortcake

It’s strawberry pickin’ time, which always screams Strawberry Shortcake time! Although Big Sis HATES them, Little Sis loves them, so the hubby took her over to the strawberry patch right by our house this past weekend. Wish I had captured a pic of them heading off on their tandem bike but the hubby did manage to snap this up:

That morning, she asked me to make some pound cake because she thought pound cake and strawberries would just taste sooooooo good together. How could I not oblige that sweet little thing!?!?! Then I thought I’d just take it one step further and make some strawberry shortcake. Why not?!?!

Strawberry Shortcake

Went online to find me a pound cake recipe as I’ve never actually made one before. Here’s the recipe I picked out: Paula Dean’s Mama’s Pound Cake from the Food Network. I am just not a fan of cooking w/ shortening so I replaced the 1/2 cup shortening with another stick of butter (3 sticks total). Next time I am going to reduce the amount of sugar by at least 1/2 a cup because this pound cake was pretty sweet. Otherwise, I LOVE this recipe, as did the girls. It was so moist and rich and delicious.

Next, I made some strawberry syrup using Momables’ Better Than IHOP’s Blueberry Syrup. I replaced the blueberries with strawberries and doubled the amount of cut up strawberries for a chunkier texture. YUM!

Finally, I made some homemade whipped cream using: Allrecipes’ Whipped Cream recipe. Oops, I just realized I forgot to add in the vanilla when making it last night, but no one seemed to notice, including me!

Voila! 3 out of 4 of us LOVED it this exact way. The last time Big Sis was forced to try a teeny bit of strawberries (at the age of 8) she literally cried and gagged, but she did agree to try a bit of strawberry sauce this time. No gagging, no crying and she even said it was ok, but declined any more. “It’s actually pretty good but I just don’t feel like any right now.” lol. Oh well. Baby steps! She had her strawberry shortcake sans strawberries. lol.
