Tomato Cucumber Mozzarella Salad (with basil of course)

English cucumber
halved and cut into 1/4 inch slices

oz
grape tomatoes
cut into halves or thirds (mine were thirded - lol)

oz
fresh mozzarella
cubed

3-4
fresh basil leaves
about 1 Tbsp, chopped + more for garnish if desired

1 1/2
Tbsp
balsamic vinegar

1 1/2
Tbsp
olive oil
-
1/2
tsp
dried oregano

Salt and pepper to taste

Place cucumber and tomatoes in a large bowl and top with fresh basil.

In a smaller bowl, combine the vinegar, oil and spices. Whisk until mixed well.

Pour over veggies in large bowl and the veggies are evenly coated.

Place in fridge until serving time.

Just before serving, add mozzarella gently mix them in.

Top with additional basil for garnish if desired
