Blueberry Crumb Muffins

Blueberry Crumb Muffins

About a month back, after an early morning conditioning session ran by my hubby for the girls and some of their soccer buddies (myself included), we stopped by a local bagel shop that actually had blueberry muffins that the girls could eat, despite their nut allergies. They all, including the hubby, mmmmm’d and mmmmmm’d about how DELICIOUS those muffins were. When I took a bite to see for myself, I had to agree – they were amazing! They were Blueberry Crumb Muffins.

“I so wanna make muffins like this!!” I thought to myself. So the following weekend, I hunted for a new blueberry muffin recipe and ran across this one: Allrecipes’ To Die For Blueberry Muffins. The name certainly fit the bill, but could it possibly be that good? Well, I must say, and the hubby agreed, yup! They’re THAT good. Even Little Sis, who rarely finishes a blueberry muffin, gobbled this one up before I knew it. Yay!! Of course, I had to add just a little something to make it a wee bit better for you, and that was 1 tablespoon of ground flaxseed and 1 tablespoon of wheat germ.
