Happy St. Patrick's Day Lunch 2016

Happy St. Patrick's Day! Little Sis is like 0% Irish but she still wanted a lunch to commemorate the day. She knows way more about the day than I do thanks to one of her homework readings last week, so that's good enough for me! Here ya go, girl!

And before I show, ya, a big thanks to Bento Ninja and Creative Food for the inspiration! :)

In this lunch:
  1. Spinach wrap with ham, muenster cheese, lettuce, tomato, avocado with Ranch dressing.
  2. Organic vanilla yogurt with sugar sprinkles and chocolate chips
  3. Sugar snap peas with ranch dressing
  4. Sour cream Pringles
  5. Rainbow fruit with strawberries, pineapple, kiwi and blueberries
  6. 2 mini Lofthouse cookies (made in a peanut-free facility!)
And Big Sis gets one, too! Her's just isn't as big. lol.

  3. Veggie Straws
  4. Applesauce
  5. Chocolates!

Oatmeal For the Whole Family

For many years, oatmeal has been an important part of how my hubby and I like to start our day. Our two girls were oatmeal lovers, too, when they were wee little babies just learning to eat solids, but as they got older, they fell out of the habit. I've been wanting to re-introduce this great breakfast option to them and Quaker's "Bring Your Best Bowl" promotion was the PERFECT way to do just that. Instead of bringing just one bowl, though, I brought 4 - a bowl for each one of our varied tastes!


I immediately made a trip to my local Walmart. I just love going to this Neighborhood Market Walmart. It's close, the prices are great, they're open 24 hours, it's bright and clean and the employees are nice and friendly. Plus, they always seems to have what I need, whether it be last-minute back-to-school supplies at 11 pm on a Sunday night (yes, I've done that before!) or to load up on Quaker® Oats and lots of toppings to go with it on this gorgeous day in NC.


It didn't take long at all to hone in on Quaker® Oats in the cereal aisle. SO many Quaker products to choose from, but I went with the good ol' Fashioned Quaker® Oats variety.

Tuna Melts

Lately, we've been trying to put some meat on Big Sis' bones. Ok, it's something we've been trying to do for a while, but even more ever since she had her yearly check up. Bottom line - put more meat on her bones. lol.

I made this a few weeks back when the girls were tracked out. We'd been eating at home a lot so one day come lunch time, I found myself standing in front of our pantry for a really long time trying to figure out what to make when I spied some canned tuna. Hmmm... tuna. Tuna... Tuna melts!! I've always loved tuna melts but it had been a reaaaalllly long time since I had one, but not sure if the girls would go for it. They have a lot of protein - perfect for Big Sis, so I thought I'd give them a try.

It was pretty easy...

tuna + mayo + a little ranch dressing + salt + black pepper

lightly toast 1 slice of bread for each serving...
spread some tuna evenly on top of the toast...
top with 1 slice of cheese (in this case muenster)...

bake in oven at 350 for about 10 minutes or until cheese is melted

remove from oven and transfer to plate

top with shredded lettuce and a slice of tomato.

eat with a fork and knife or have fun eating it with your hands like a pizza.

I was so excited that the girls devoured their tuna melts. Yay! Just love these little successes and new discoveries!

EasyLunchboxes Lunches for College Kids

Back at Thanksgiving of last year (yes, I'm playing catch up!), we hosted my wonderful family which included my parents, brother, aunt, uncle and their kids, Austin and Jenna, aka the kiddies. We still call 'em "the kiddies" even though they are in college now - one's a junior and the other's a freshman, but they will always be "the kiddies" in our hearts. lol.

After a fun-filled long weekend, it was time to send these guys back to school. Jenna, one of my more dedicated followers on Instagram, likes and comments frequently how she'd love me to pack her lunches, too, so I thought it would be funny to pack her and her bro their own EasyLunchboxes lunches to eat on the road back to school. And they'd also have a set of their own to use back at school!

These little sweeties were our kids before we had kids. When they were babies, the hubby and I were in our 20's and we just counted the days until we got to visit and play with these cuties. Many fun times were had during our countless number of visits.


Now here they are, all growed up, and showing off their lunches. :)


The totally amazing this is now the kiddies come to visit and play with another generation of kiddies and our girls couldn't love them more.


Here are the lunches I packed for the ol' college kids. I tell ya, it's still so hard to believe that they are old enough to be in college!!

Homemade Egg McMuffin

Homemade Egg McMuffins. What's not to love?

This morning Little Sis was not a happy camper. I had mistakenly told her that she could have a play date with her buddy today after school because she missed out on a super fun play date yesterday due to soccer practice. Well, I had a brain malfunction and realized last night that, Oooops! she had soccer practice today, as well! I don't know what I was thinking... she's only had this soccer practice every week for almost a year now!

Well, I broke the news to her as gently as I could but despite my efforts, the dreaded words "I hate soccer practice!!" reared their ugly head. I had some quick making up to do. Half jokingly, I had asked her if she wanted candy for breakfast to which she sadly replied, "no". How about soda? (haha). No. A poptart? Cake? Waffle? All no's. Well, what WOULD you like for breakfast? "A homemade Egg McMuffin". Wow, that was easy. I was more than happy to whip one up and let her watch her Minecraft StampyLongnose videos on her iPad while eating breakfast. Sometimes you just gotta bend the rules. :)


I'm happy to say she went to school with a belly full of this healthy breakfast, happy and no longer hating soccer practice. Whew! That was a close call!

It was as easy as pie to make this delicious breakfast. I even made one for myself! Not a bad way at all to save the day. :)

In this breakfast:
  1. Bay's Whole Grain English Muffins, warmed but not necessarily toasted
  2. 1 organic fried egg.
  3. 2 slices of fried Applegate ham
  4. 1 slice of Applegate American cheese
