Clean Out That Veggie Drawer Veggie Saute

Every time we go on extended vacation, the night before is always busy cleaning out that fridge, among other things. Last time it was "Easy Clean Out That Veggie Drawer Spaghetti Sauce". This time it's a veggie saute! This was my serving and the hubby's was even bigger! LOL!!

Even w/ this hodge podge of veggies, we both agreed - YUM!!! and healthy!

In this veggie saute:
  1. Apsaragus, cleaned and cut into 1 inch pieces
  2. Half an onion, diced
  3. Color grape tomatoes from Trader Joes, about 1/2 a package
  4. 16 oz package of Baby Bella Mushrooms, quartered
  5. about 2 cups of baby spinach

Slow-Cooker Shredded Buffalo Chicken Sandwiches

Just have to share one of my favorite crock pot recipes ever. It's SO easy and SO good. I've made this countless number of times for family and friends and each time, it's to seriously rave reviews. I've already posted about this once before in Weekend of Friends, Food and Soccer, but I thought it's so good, it deserves its own post (and some better pix). :)

Here's the recipe: All Recipes' Slow Cooker Buffalo Chicken Sandwiches. If you make it just as the recipe calls for, it's really not all that spicy. Even my dear Mom #2 who does not like spicy stuff, was able to eat this just fine (and liked it, too!). Kids like it as well!! Some may need the shredded chicken rinsed off a little w/ water if they have little to no tolerance for spiciness. And of course, just add more sauce to your own sandwich to kick it up a notch. :)

I usually double this recipe to have lots of leftovers. :)

Here's Lunch #9: Bagels for Lunch

The girls requested a bagel sandwich lunch last week. After years and years of whole wheat breads, Big Sis is starting to slowly revolt, so here's me throwing her a bone every once in a while. Enjoy your plain white mini bagels, Big Sis! Without further ado, Heeeeeere's lunch! :)

In this lunch:
  1. Thomas' Plain Mini Bagels (at least they don't have High Fructose Corn Syrup!) and cream cheese sandwiches
  2. Pretzels 
  3. Homemade Chocolate Chip Banana Bread cubes using the same Betty Crocker's Banana Bread Recipe I've been using for over 20 years!
  4. Sunmaid Raisins for Big Sis and strawberries for Little Sis (thank goodness at least one of my kids LOVE fruit!)
  5. Organic broccoli florets and organic baby carrots w/ a side of ranch dressing
  6. Lofthouse-style Homemade Flower (and Star) Cookies (Yay! No nut contaminants for my nut-allergic sweeties!) straight out of the freezer where I keep some to have healthier lunch treats on-hand and perfectly thawed by lunch!

Here's Lunch #8: Waffle Breakfast

Heeeeere's lunch! Actually, breakfast. :) Big Sis and I had to be on-the-go this morning so this is what she ate. :)

Chicken 'n Waffles

My hubby and I have been laughing about "chicken n' waffles" for years and years, ever since his bro told us about that California chain Roscoe's Chicken and Waffles he'd read some 10+ years ago. None of us thought it sounded very appealing. Maybe it's because I always pictured a giant greasy drumstick quarter sitting on bed of waffles and syrup. Never tried it either... until last night! And I gotta say, that Roscoe's knows what they're doin'! :)

Not sure what possessed me to make them... oh wait, I do. It was that $20 of chicken that was right on the edge of spoiling but I didn't have the heart to throw out, so I threw it in a crock pot to cook the heck out of in instead. :) I looked up a recipe I'd seen on Pinterest a while back and had to try it, if anything for the funny name: "Man-Pleasing Chicken" by A Feast for the Eyes. This is actually an oven-baked dish but I thought why not!

Well, it was 7:55 am and I had to leave with Big Sis for an appt at 8:10 am. I barely read the recipe in my haste but this is what I threw together. I "forgot" to sprinkle w/salt and pepper because it wasn't listed in the ingredients list and I didn't actually read the recipe, but it still turned out pretty yummy without it. Just doesn't look as pretty as the recipe's picture. Well, mine looked nothing like the picture, but that's because mine's shredded. :)

Shredded "Man-Pleasing Chicken" in a Crock Pot
2 lbs chicken breast
1/4 cup pure maple syrup
1/4 cup dijon mustard
1 Tbsp rice wine vinegar

I threw it all in the crock pot on low for 8 hours. I didn't even bother to mix it or nuthin'! 8 hours later, I just took two forks, shredded up the chicken and then left it on warm.


Then I took out my handy dandy waffle maker that we got for our wedding almost 17 years ago. I really want a new one, but the thing just won't die! lol. Oh well, still makes tasty waffles. I used my tried and true Homemade Pancakes recipe, but omitted the sugar because I don't think already kinda sweet chicken needs more sugar to go with it.


I gave the girls an early warning in the car when I picked them up from school. Told them it was "Try Something New Day" and that we were gonna have chicken and waffles. They both giggled. Big Sis asked, "Wait, what kind of waffles?" And knowing exactly what she was thinking, I replied, "Don't worry, they won't be blueberry waffles (or sweet for that matter) because that would just be weird." And then she agreed to try 'em. :)

They wanted their chicken separate from their waffle so I made nice little piles of food on their plates. lol! I said it was fine to eat them all separately, but that I'd love it if they tried just a bite of chicken ON the waffle. In the end, I noticed that they both topped their waffles w/ chicken, dipped them in BBQ sauce and took bites like they were eating mini pizzas and managed to cleaned their plates. :) Oh yeah, the girls had a hankering for my Homemade Alphabet Chicken Soup, so I just took some out of the freezer and warmed it up so they could have of some on the side. :)

This is how Sweetie and I ate ours. I also warned him that I had something *interesting* planned for dinner and just go with it. ;) After a few bites, I heard "WOW. This is reallllly goooooood." Sweet! So it IS man-pleasing chicken, despite his initial disapproval at the maple syrup that went into the chicken that morning!!! :)
