8 Super Easy Sandwichy Ideas for Lunch

I pack lunch an average of about 3 times a week for each my 2 girls. Even though it's not every day, it still gets old! Plus, I am not motivated enough to pack lunches the night before, so what I pack in the morning always ends up being fast and easy. Typically 10 minutes or less for 2 lunches. That's not too bad, right?

Here are 8 really quick, really easy "sandwichy" lunches that I end up packing quite a bit. "Sandwiches are boring" my girls tell me quite often, but they don't seem to mind any of these variations. All it takes is a little change up of the bread and poof! it's not boring any more. Silly gooses, they're still sandwiches but they always gobble these right up!

Here's a closer look at each one with a link to the original post for more details. I'll start with the top left corner and then go clockwise:

1. Flat Sandwich Rounds helped make St. Patrick's Day a little yummier this year with bacon, egg and cheese.

2. Pizza Lunchables are a fave of Big Sis and she requests them quite often which makes me laugh because cold pizza lunchables just don't do it for me, but I have no problem making this since these lunches are about as easy as they come! And they always come back empty.


3. Croissant Breakfast Sandwiches - a special treat since we don't always have croissants on-hand. So when I happen across safe (nut-free) croissants, you bet I'm all over it!


4. Cheese and Cracker "Lunchables" - tried and true, these show up in our lunches like ALL the time! It helps that these are THE EASIEST to make. And always look fun.



5. BLT Sliders - Little Sis recently discovered her love of BLTs and loves them for lunch now.


6. Mini Hot Dog Bun Subs - for Big Sis, the lover sub sandwiches. This one is the perfect size and not too bready at all!


7. Mini Bagel Breakfast Sandwich with egg, bacon and muenster cheese for Little Sis who is a sucker for breakfast sandwiches :)


8. Sandwiches on Sticks - now this one cracks me up since they are like exactly a regular sandwich but cut up! Sticks make everything more fun, no? :)

Breakfast Quiche Squares

I've always been a big breakfast kinda girl, but that's not easy to do on school mornings when you've got kids to wake up, lunches to pack and your own self to get ready, too! That's why I'm always looking for quick and easy breakfast ideas that are healthy, full of protein sans all the sugar. Oh and yummy too. Here's one that I've been making a lot for the girls. The key to turning this into easy is to put the time in up front to make it and then cut and freeze for future use. Now I can serve the girls a healthy, delicious AND warm breakfast on school mornings with very little fuss. Simply pull a few squares out of the freezer and heat up in a toaster oven!

I started with Food Network's Quick Quiche recipe and then made it my own. Here's my version:

Breakfast Quiche Squares

adapted from: Food Network's Quick Quiche recipe

INGREDIENTS:
6 eggs
1 cup half and half
1/2 cup real mayonnaise
2 tablespoons flour
1/3 cup minced onions
8 ounces shredded 3 cheese blend of Monterrey Jack, mozzarella and cheddar
2 cups chopped fresh spinach
6 strips of cooked bacon, crumbled
1/8 tsp of garlic powder
1 pinch of salt
1 package unbaked pie shell (2 pieces)

DIRECTIONS:
  1. Preheat the oven to 350 degrees Farenheit. Grease baking dish.
  2. Combine both pie crusts in one large dough and roll out into a rectangle about 2 inches larger than your 9x13 baking dish (11x15). Carefully place dough in greased baking dish and layout evenly so the dough goes up the sides by about 1 inch.
  3. Beat the eggs, half-and-half, mayonnaise and flour in a medium mixing bowl. Add remaining ingredients.
  4. Pour egg mixture into pie crust and bake for 45 mins to an hour or until top is golden brown.
  5. Let cool for about 10 mins and cut into squares.
  6. Eat some now and freeze some for later!
  7. To reheat, simply take the desired number of squares and place on greased cookie sheet. Bake at 350 for about 7-10 mins or until heated throughout.

Combine both crusts into one large dough ball and roll it out on a floured surface. Be sure to make it at least 2 inches larger than the dimensions of your pan!


Carefully play with the edges until you get them about 1 inch high on each side:


See, it's a perfect fit!


Right out of the oven. It really fills the air with a mouth-watering aroma. Mmmm. Let it sit and cool for about 10-15 mins.


Cut into squares and place on a cutting board or plate to freeze.



Make some room in the freezer and stuff it in there for a couple hours until hard.


Place in a container of your choice - whether it be this Pyrex dish or a ziplock bag (I've done both) and save for quick.easy.yummy.HOT future breakfasts!

Hot Dogs for Lunch

The girls opted to buy lunch at school today so I'll just post this hot dog lunch from a couple weeks back. I don't send in hot dogs very often, but we had some left over from a cookout the weekend before, so I thought, "Why not?" The girls did love 'em!

Oh, and since some people were asking, I sent these hot dogs in straight out of the toaster oven, onto the buns, into the EasyLunchboxes. Usually, doing this makes the bread soggy, but in this case, it reminded me of the perfectly steamed hot dogs and buns from the streets of NYC, plus I was lazy and didn't want to bother with wrapping them any further. :) I did include an ice pack in each lunch to keep the GoGurt cold, but tried to keep it as far away from the hot dog itself. The girls reported that though the hot dot wasn't hot, it wasn't cold either. It was warm. Ish. And they ate it all up as you can see at the end of this post. :)

Here's a close-up of Big Sis'. After I had taken the above picture, I realized that Big Sis was not to get her treat today because she ate her treat without finishing her entree so sadly no treat for her this day.

Hot dogs are one of my food weaknesses and I'm seriously contemplating eating one for breakfast now! lol.


I'd say lunch went over pretty well, wouldn't you? Big Sis is one of those kids who almost always leaves just one little bite (argh!) and Little Sis said that she ran out of time. Fair enough! :)

Sandwiches on Sticks and a Dove Heart

Just found a lunch I packed about 2 months ago and forgot to post! Better late then never, right? With that, here's lunch!

Let start with Little Sis':

  1. Sandwiches on Sticks using Nature's Own 100% Whole Wheat Bread with Applegate Ham and American Cheese
  2. Organic crinkle cut carrots using my cool crinkle cutter with Marzetti's Simply Dressed Ranch Dressing - it's not organic but it has no high fructose corn syrup, MSG, preservatives, artificial flavors nor coloring AND my girls like it!
  3. Strawberries
  4. Sensible Portions Garden Veggie Straws with Sea Salt
  5. Simple Truth Organic Animal Crackers - but more importantly, they're made in a peanut-free facility with a dark chocolate dove bite

Regular ol' Sandwiches for Lunch

Heeeeeere's a regular ol' lunch that still made Little Sis' eyes widen with delight because it's her fave BLT. :)


Here's Little Sis' BLT.

  1. BLT (bacon, lettuce, tomato, a slice of Applegate's muenster cheese and a smidge of mayo) on Nature's Own 100% Whole Wheat Bread
  2. Baby cut carrots with Marzetti's Simply Dressed Ranch Dressing
  3. Red Seedless Grapes
  4. Pringles Sour Cream Chips (in the Blue Avocado Zip Bag) aka "Man Chips"
  5. Little Bites Chocolate Chip Muffins
And Big Sis':
In this lunch:
  1. Applegate Blackforest Ham and American cheese, bacon with lettuce and mayo on Nature's Own 100% Whole Wheat Bread
  2. Baby cut carrots with Marzetti's Simply Dressed Ranch Dressing
  3. Brother's All Natural Freeze Dried Asian Pear
  4. Pringles Sour Cream Chips (in the Blue Avocado Zip Bag) aka "Man Chips"
  5. Kids' Cliff Protein Bar - which is technically not a treat because Big Sis ate her treat yesterday while barely eating half of her ravioli. BOO!!
