Pre-Piano Recital Rehearsal Snack

The girls had a piano recital rehearsal from 4:45pm - 6pm last night which meant next no time after school for snacking so they were gonna be HUNG-GRY! We also had dinner plans at a restaurant with friends at 6:15, which meant it would be hard to get their veggies in them while socializing (on all our parts). So, we got their veggies (along with a yummy snack) in them as we headed out the door to rehearsal. Certainly makes for a more enjoyable meal where no one has to fuss over veggies. :)

Happy to report snacks and veggies were eaten, rehearsal went well and dinner was quite enjoyable!

Rest Stop Lunches

As we were getting ready to head out-of-town yesterday for a weekend of fun with friends (can you say ROAD TRIP?!?), my brilliant hubby suggested we stop for a rest area lunch to enjoy the absolutely gorgeous weather we were having. And just like that, we got busy packing lunches. Hubby took care of ours while I handled the girls'. Don't we make a great team? :)

Hubby's delicious salad, one for each of us. Despite the picture, these babies were HUGE!


In this salad:
  1. Organic Baby Spinach
  2. Broccoli Slaw
  3. Shredded Carrots
  4. Grape Tomatoes
  5. Baby Bella mushrooms
  6. Leftover Chicken Breasts brined, seasoned and grilled perfectly (for once! haha) by the hubby
  7. Sunflower seeds
  8. Dried Cranberries
  9. Topped with some leftover Couscous Salad, the icing on the cake!!
And here's what I packed for the girls:

  1. Sub sandwiches on Cobblestone Philly-Style Hoagie Rolls with Applegate ham and muenster cheese and shredded lettuce on Little Sis' and Applegate Turkey and American cheese with shredded lettuce and mayo on Big Sis'

  3. Carrot sticks
  4. Bugles
  5. Rice Krispies Treats
Indeed, the day was gorgeous as we munched on our lunches.

Here's Lunch #27: Ravioli

Ravioli lunches are my easy lunches. Don't have to do much but boil water, cook 'em and them stick 'em into their thermoses! Sweet! With that, heeeeeere's lunch! :)

  4. Grapes for Little Sis and Peeled Snacks' Berry Apple Clusters for Big Sis
Little Sis' lunch came back COMPLETELY emptied and she told me that I need to pack her more for lunch and snack next time. lol. Big Sis had a few things left over here and there, but did pretty well herself.

Tropical Kale Smoothie

Here's another kale smoothie recipe - my favorite one yet. The girls refuse to drink my kale smoothies because 1. they just don't like smoothies, in general and 2. they're green. Like reallllly green, but the hubby and I just love love love them. Your loss! More for us, I tell them in my snottiest voice possible. haha!

What I love about smoothies is that they are quick and easy to throw together and can be a complete lunch for me on days when I just don't have the time. I made this today after returning home from running errands on my bike! Plus, I can walk around doing stuff while drinking it. Or just sit on the couch while catching up on my Mindy Projects. :)

In this smoothie:
  1. 1 frozen banana
  2. 1 cup frozen pineapple chunks
  3. 1 cup frozen strawberries
  4. 8 baby carrots
  5. 7 oz container Fage 2% Greek Yogurt (or your favorite brand)
  6. 2 handfuls chopped Kale
  7. 1 - 2 cups of coconut water (to desired consistency)
Place the ingredients in the order listed and then use the smoothie setting and go!

*Makes about 5 8oz servings.

Strawberry Shortcake


It's strawberry pickin' time! Though Big Sis HATES them, Little Sis loves them, so the hubby took her over to the strawberry patch right by our house this past weekend. Wish I had captured a pic of them heading off on their tandem bike but the hubby did manage to snap this up:


That morning, she asked me to make some pound cake because she thought pound cake and strawberries would just taste sooooooo good together. How could I not oblige that sweet little thing!?!?! Then I thought I'd just take it one step further and make some strawberry shortcake. Why not?!?!


Went online to find me a pound cake recipe as I've never actually made one before. Here's the recipe I picked out: Paula Dean's Mama's Pound Cake from the Food Network. I am just not a fan of cooking w/ shortening so I replaced the 1/2 cup shortening with another stick of butter (3 sticks total). Next time I am going to reduce the amount of sugar by at least 1/2 a cup because this pound cake was pretty sweet. Otherwise, I LOVE this recipe, as did the girls. It was so moist and rich and delicious.

Next, I made some strawberry syrup using Momables' Better Than IHOP's Blueberry Syrup. I replaced the blueberries with strawberries and doubled the amount of cut up strawberries for a chunkier texture. YUM!

Finally, I made some homemade whipped cream using: Allrecipes' Whipped Cream recipe. Oops, I just realized I forgot to add in the vanilla when making it last night, but no one seemed to notice, including me!

Voila! 3 out of 4 of us LOVED it this exact way. The last time Big Sis was forced to try a teeny bit of strawberries (at the age of 8) she literally cried and gagged, but she did agree to try a bit of strawberry sauce this time. No gagging, no crying and she even said it was ok, but declined any more. "It's actually pretty good but I just don't feel like any right now." lol. Oh well. Baby steps! She had her strawberry shortcake sans strawberries. lol.

Here's Lunch #25: Practicing with Chopsticks

Ok, I must have accidentally deleted this post, so here I go again. The girls only had a couple more days left of track out and I thought they'd have fun practicing using chopsticks using the handy dandy chopstick helpers I got from Pei Wei many years ago. If you can't find a set, Little Sis quite often fashions one using a rubber band. Just call her a mini MagGyver. ;)Heeeeeere's lunch! :)

  1. Paninis using Applegate Turkey and Muenster Cheese on Trader Joe's 100% Multigrain Bread (they seem to be much more excited about these grilled cheese sandwiches when I call them "paninis". lol)

  4. Avocado chunks

They had fun gobbling up their lunches using their chopsticks and it didn't even take very long! :)
