French Bread Pizzas - yummy and easy

Here's one of my quick and easy go-to dinners for when I don't have a whole lot of time to cook up something fancy and don't want to do fast food. The girls love it and as pizzas go, it's actually not all that bad for you!

Here, I used whole wheat demi baguettes from Target (I buy a bunch of these and stick 'em in the freezer for future use). It's best to thaw as much as possible and even pre-toasted for extra crispiness before putting the pizzas together. This is one baguette sliced in half both lengthwise and in thickness. I topped them with Muir Glen's organic pizza sauce, Trader Joe's Shredded 3 Cheese Blend (which is made with milk from cows not treated w/ rBST hormones), mushrooms for Little Sis and Applegate Pepperoni for Big Sis. I even just stick 'em in the bottom rack of my toaster oven set at around 350 for about 7-10 mins, or until the cheese is nicely melted. Yum. I always kick myself for not making one for myself.


Of course, dinner is served w/ at least one serving of veggies. The girls usually eat their fruit in the mornings, carrots with lunch and green veggies with dinner. I also gave the girls a fresh mozzarella ball to try out. :)
