Clean Out That Veggie Drawer Veggie Saute

Every time we go on extended vacation, the night before is always busy cleaning out that fridge, among other things. Last time it was "Easy Clean Out That Veggie Drawer Spaghetti Sauce". This time it's a veggie saute! This was my serving and the hubby's was even bigger! LOL!!

Even w/ this hodge podge of veggies, we both agreed - YUM!!! and healthy!

Slow-Cooker Shredded Buffalo Chicken Sandwiches

Just have to share one of my favorite crock pot recipes ever. It's SO easy and SO good. I've made this countless number of times for family and friends and each time, it's to seriously rave reviews. I've already posted about this once before in Weekend of Friends, Food and Soccer, but I thought it's so good, it deserves its own post (and some better pix). :)

Here's the recipe: All Recipes' Slow Cooker Buffalo Chicken Sandwiches. If you make it just as the recipe calls for, it's really not all that spicy. Even my dear Mom #2 who does not like spicy stuff, was able to eat this just fine (and liked it, too!). Kids like it as well!! Some may need the shredded chicken rinsed off a little w/ water if they have little to no tolerance for spiciness. And of course, just add more sauce to your own sandwich to kick it up a notch. :)

I usually double this recipe to have lots of leftovers. :)

Here's a close-up for those of you who love close-ups. :)

And lunch the next day. It's the recipe that keeps on giving and giving and giving. :)

Here's Lunch #9: Bagels for Lunch

The girls requested a bagel sandwich lunch last week. After years and years of whole wheat breads, Big Sis is starting to slowly revolt, so here's me throwing her a bone every once in a while. Enjoy your plain white mini bagels, Big Sis! Without further ado, Heeeeeere's lunch! :)

EasyLunchboxes Giveaway!

Happy Tuesday! What better way to start the day off than with a giveaway!?!? After all my hootin' and hollerin' about my favorite lunch-packing tool, I thought it was finally time to let one of you lucky readers try a set out for yourself!

When Big Sis started Kindergarten way back when, I packed the majority of her lunches because:
  1. she was pretty picky,
  2. I was worried about her tree nut allergies and
  3. school lunches just didn't seem all that great, anyway.
Not wanting to use wasteful disposable plastic baggies and such, I used what seemed like a million different plastic containers on a daily basis. It worked fine and dandy but I got super tired super fast of washing those "millions" of pieces of plastic - EVERY DAY. That was about 3 years ago and that's when I started off on my search for a lunchbox that would fit my needs and happened upon my first set of EasyLunchboxes. It was love at first sight and it is a love that's still going strong. Hee hee. I bought a second set about 6 months later after deciding I needed more! :) So now I have plenty to pack lunches for both Big Sis AND Little Sis, who has since joined the ranks of the cute little school girls, as well as Daddy and myself on occasion AND to keep some in the car for drive-thru lunches on-the-go. Though they aren't typically supposed to last this long, mine have been going strong for 3 years and counting!
