Quesadilla Lunches

This morning, Daddy took the girls to Dunkin' Donuts for breakfast! Here's a pic of my voracious little animals devouring their breakfast croissant sandwiches followed up by a donut of their choosing. Big Sis chose a Spring Fling donut and Little Sis Got a Marbled Chocolate donut. Let it be known that I was good and commanded the hubby NOT to bring me anything back. :)


Well, such a big breakfast meant little time for a lunch that has to take place before soccer camp at 1pm, so here's another quick, easy and light lunch. Needless to say, their lunches were NOT devoured as they were still full from breakfast, but they did manage to finish their carrots, Little Sis her cantaloupe and both a couple wedges of cheese quesadilla which was fine with me since that meant MY lunch was taken care of. haha! And I put them in my EasyLunchboxes because even though we weren't on the go, it's always fun to eat out of them! :)

  1. Cheese quesadillas made with Shredded Mexican Cheese on La Banderita Soft Whole Wheat Flour Tortillas
  2. Low Fat sour cream and Muir Glen Medium Spicy Organic Salsa
  3. Organic Cooked Carrots
  4. Cantaloupe for Little Sis and Organic Fuji Apple slices for Big Sis

Sub Sandwiches for Dinner

Even though the girls have been tracked out of school, things seem to be busier than ever. With the half-day, week-long soccer camp the girls are registered for as well as their individual weekly practices, I've been running around like a crazy person.

Take yesterday, for example. Between a doctor's appointment in the morning for Big Sis, then soccer camp from 1-4pm and then Big Sis' soccer practice at 5:30pm, that didn't leave a whole lot of down time, nor time for cooking! On our way home from camp, Big Sis said she really wanted a Subway sub. I didn't want to eat out so instead we made a quick stop at the grocery store to let Big Sis pick out her fave sub rolls and lettuce. I normally use wheat bread and spinach, but thought I'd let her exercise some power of choice tonight. Little Sis requested to add her favorite Man Chips (Pringles Sour Cream Chips) to the list, so oblige I did. 

By the time we got home, I barely had time to throw this together for them to take to soccer practice. These seemed kinda big to me, but much to my surprise, Little Sis HOUSED hers during Big Sis' practice and Big Sis SCARFED hers down on our way back home. Wow, I'd say they were quite a hit!


In these dinners:
  1. Trader Joey's Frozen Peas, lightly boiled and seasoned w/ a pat of butter and a dash of Kosher salt
  2. Pringles Sour Cream potato chips aka "Man Chips"
  3. Big Sis: Applegate Ham with Applegate American Cheese, red leaf lettuce and mayo.
    Little Sis: Applegate Ham and Applegate pepperoni and Trader Joe's Meunster Cheese both on on Cobblestone Mill Philly Style Hoagies. Too bad these have High Fructose Corn Syrup, but they taste soooooo good that I cave in every once in a while. :)
  4. 2 strawberries for Little Sis
We didn't make it home from soccer practice until almost 7pm, so guess what the hubby and I had for dinner? That's right, subs!! But ours had more kick to it. Yum. We love kick. :)

  1. Sub with Applegate American cooked ham and cheese with spinach, mayo, dijon mustard and Wickles zesty relish
  2. side o' organic grape tomatoes
  3. Kettle Brand Spicy Thai Potato Chips
  4. Green Giant Healthy Weight Frozen Veggie Pouch containing: Sliced carrots, sugar snap peas, black beans and edamame lightly tossed in butter sauce. 
Update (4/27/13): 
Re-reading this post just reminded me of the grocery shopping trips my brother and I would take with my mom on Saturdays when we were younger. Occasionally we'd spy some really yummy sub rolls and then get all sorts of fixin's to go with 'em. Then we'd go home and layout our spread and the four of us (Dad included) would just make what I remember to be the most awesomest Dagwoodish subs EVER and then be stuffed full.  Aaaaah, sweet childhood memories. :)

Quick, Easy and Light Lunch at Home

Girls have been asking me to make some Mama's Coffee Cake so today, I obliged them. But our schedule's been kinda lax with them being tracked out from school, so I made it just as they were finishing up breakfast at 10:30am since Big Sis didn't wake up until almost 9:30am and Little Sis had to be coaxed out bed at nearly 10! Whoops! Looks like it might be a late night for them tonight, but luckily I won't have to deal with it since the hubby insisted I go out to tonight's hockey game with my friend. Haha! Thanks, sweetie and sorrrrry! Big Sis will most likely still be up which means I definitely need to stay out for beers afterwards. Hee hee.

Anyway, with pending soccer camp at 1pm and a late breakfast, we just barely snuck in a quick, easy and light lunch, with coffee cake on the side! :)

This is a pic I took the last time I went to a hockey game w/ my buddy Cindy in January, whom I've known since the 4th grade and lived right down the street from me in MD. How cool we both ended up in the same NC city!


Maybe we'll actually win a game tonight - GO CANES! and thanks sweetie!! <3

I'm baaaaack!!

And of course our food. I'm just as bad as when my girls go, ie spend too much money on food and treats, but that's just part of the fun, right? :) And even though we got to the arena 30-mins pregame, we ended up getting down to our seats late because we were too busy seeking out our goodies. :)

As luck would have it, I just HAPPENED to have seats right next to some of our closest friends - we had no idea the other was even gonna be there! SWEET! So Cindy took a pic of us, but first we had to wait for a "stoppage in play" so I thought I'd show you how into the game I was. :)

It was rather crazy night because not only did I run into these guys, I ran into 2 other folks I know in addition to one I spied further down from me and another one I scoped (and even waved to further, way further up). hee hee. That doesn't include seeing our family doctor in the row behind us. Apparently, it was THE place to be tonight! :)


And guess what?!?!? We WON!! and in a shoot-out no less! We NEVER win shoot-outs! WOO HOO!


Yay!! Go CANES! :)

Oh and I'm happy to report that the girls had a good night w/ their daddy. I even got to say good night to Big Sis who was nearly asleep. Little Sis was out cold. Good night and sweet dreams! :)

Meatless Monday: School Cafeteria Lunch at Home

The girls are tracked out for the next 3 weeks (yay!) but what do they start doing almost immediately after they wake up? Yup, playing school. So here's another variation of School Cafeteria Lunches (at Home). :) This time I put a meatless twist to it so I can share it on my Bento Buddy BentoForKidlet's Meatless Monday Linky. Yay!   1. Doctor Yum's Homemade Snickerdoodles
  2. Sabre Classic Hummus
  3. Tostito's Blue Corn Chips (organic!)
  4. Grilled Cheese using Applegate American Cheese and Nature's Own 100% Whole Wheat Bread
  5. Chopped spinach salad with broccoli slaw and shredded carrots
  6. Peeled Mandarin Orange wedges
  7. 2 glasses of Horizon's Fat Free Milk
The girls didn't have too much time before heading out to a 1/2 day indoor soccer camp, but managed to get some speedy nutrition in for some soccer drills. :)

Earth Day 2011: Little Sis' Trash Pick-Up

This is a note I wrote back in 2011 when Little Sis was in preschool. Just couldn't help but re-post this here on Earth Day 2013! :)

Ever since Little Sis brought home an Earth Day brown paper trash bag...

... and plastic glove to go with it from pre-school yesterday,

...and my glove! Huh? It's way too big!
just about all she has talked about is how she wants to go pick up trash somewhere. "Mommy, will you drive me some place where there is a lot of trash to pick up? OH! I KNOW!! You know that place we walk by when we go to hockey games? There's a lot of trash in the bushes by the gas station there. We could go there!!!!" Luckily, neighbor Jodi and I were able to convince her that if we canvas the neighborhood on trash day AFTER the trash is picked up, we should be able to fill our bag! Cool! So off we went, Joey on her bike and Mommy on foot. We found a couple of bits and pieces on our way to the main road:

...but our most interesting find was a pack up cigarettes very neatly (and cleverly) tucked by the trunk of some little bush on the side of the main road. Hmmm, that's gotta be someone's secret stash. Part of me was inclined to just leave it there ('cause cigs ain't cheap, ya know!), but Little Sis was already hot on the case. She actually spotted it first and eagerly ambled up the little hill to fetch it before I could say a word...

and tossed the nearly full pack (I had to peek) into her trash bag. Doh! Someone's NOT gonna be happy when they find out what we've done!!

The rest of the patrol, we found half-empty water bottles, a plastic bag, a sweetart wrapper, a pair of rubber gloves (ewww, i picked those up myself), an MLS listing, chalk, chalk artwork, a nearly full roll of masking tape and a few other less notable items.

At our midpoint, we decided to reward ourselves with a stop at the nearby church's playground where Joey played for a few minutes until she deemed it time to move on.

Break time!
We made it back after about an hour and a half, hot, tired and hungry, but Little Sis was so excited that she was able to make our neighborhood "a libidit cleaner" and I daresay I had fun helping her. Happy Earth Day! :)
