Dinner on the Go

Dinner on the go is a must when soccer practices take place between 5:30-6:30 twice a week. DOH! I try hard not to let fast-food be an option so I'm left w/ dinner on the go. I won't lie - sometimes it's a total pain to not only come up w/ a packed lunch for school but dinner too! Plus, I'm usually pretty crunched for time from the time the girls get off the school bus to the time we leave for practice, so I try to stick to quick and easy, but warm and yummy! This is one of the dinners I made last week and it went over pretty well w/ the girls and it didn't take too long to throw together.

Chicken Burritos made using ground chicken, sauteed onions, broccoli slaw, carrots & Ortega Taco Seasoning (or your favorite mix) topped w/ cheese, sour cream, spinach and salsa. I usually half the seasoning called for since my girls are a little squeamish when it comes to spicy seasonings. :)

The chicken burritos along w/ some chips, veggies and fruit (for the one who willing eats them, aka Little Sis) help make a well-rounded meal.
